Tofu and wakame miso soup is another good miso soup. It seems that many Japanese restaurants in North America have tofu and wakame miso soup on their menus. Wakame is kelp (seaweed). You can usually find wakame in a dried form at your local Asian grocery store.
1 cup dashi
1 serving tofu (cubed)
1/2 teaspoon wakame
1 tablespoon miso
1 green onion (chopped)
1. Bring the dashi, tofu and wakame to a boil in a small sauce pan.
2. Remove from heat.
3. Dissolve the miso with some of the heated dashi in a separate bowl. (We do not want to boil the miso as it will not taste as good.)
4. Add the miso back to the soup.
5. Pour the soup into a bowl and top with green onion.
