A Cuban style picadillo is a dish that typically includes ground beef, bell peppers, onions, garlic, oregano, cumin, bay leaf, tomato sauce, olives, capers, and raisins. This version makes a simple substitution of sliced chicken for the ground beef. Picadillo comes together in less than 30 minutes, plenty of time to steam some rice, and it’s just packed with flavour!
Chicken Picadillo
All of the flavours of a Cuban style picadillo with capers, olives and raisins with chicken!
ingredients
- 1 tablespoon olive oil
- 1 pound chicken (sliced or ground)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, chopped
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1 (15 ounce) can crushed tomatoes
- 1/2 cup pimento stuffed olives, sliced
- 1/4 cup raisins
- 1 tablespoon capers
- 1 tablespoon Worcestershire sauce (optional)
- 1 tablespoon soy sauce (optional)
- 1 tablespoon apple cider vinegar
- salt and pepper to taste
directions
- Cook the chicken, onions and pepper in a large skillet over medium-high heat.
- Add the garlic, paprika, oregano, cumin, salt and pepper and cook until fragrant, about a minute.
- Add the tomatoes, olives, raisins, and capers, bring to a boil, reduce the heat and simmer for 5 minutes.
- Add the Worcestershire sauce, vinegar and fish sauce, before seasoning with salt and pepper to taste and enjoying!
