Ham and Bean Soup


I still had a lot of leftover ham from the gingersnap crusted ham that I made a while ago. Ham and beans are a natural combo and I was thinking that a ham and bean soup would be a perfect way to enjoy some of the leftover ham. When making a ham soup it is always a good idea to simmer a ham bone in the soup for an hour or more as it adds a tone of ham flavour. I froze the ham bone along with the leftover ham for such such and occasion. I kept the recipe pretty basic and I decided to go with a combination of cannellini beans and romano beans. I added half of the beans while simmering the ham bone for flavour and then used an immersion blender to puree them to give the soup a nice creamy texture. I added the rest of the beans after to get the whole bean texture as well. I also had some leftover green beans on hand and I was thinking that it would be nice to have a green vegetable in the soup so they went in to. The ham and bean soup turned out really well. It was nice and creamy and packed full of ham flavoured goodness. I am looking forward to enjoying the leftovers for lunch this week.

Ham and Bean Soup

(makes 4-6 servings)

Ingredients:
1 tablespoon olive oil
1 onion (chopped)
1 carrot (chopped)
2 stalks celery (chopped)
2 cloves garlic (chopped)
4 cups chicken stock
2 cups ham (diced)
1 ham bone (optional)
1 (19 ounce) can white beans (drained and rinsed)
1 teaspoon oregano
1 bay leaf
1 (19 ounce) can white beans (drained and rinsed)
pepper to taste
1/2 pound green beans (cleaned, trimmed and cut)

Directions:
1. Heat the oil in a large sauce pan.
2. Add the onions, carrot and celery and saute until tender, about 10-15 minutes.
3. Add the garlic and saute for a few minutes.
4. Add the stock, ham, beans, oregano and bay leaf and simmer, covered on low heat for an hour.
5. Use an immersion blender to blend some of the beans to give a nice and creamy texture to the soup.
6. Add the remaining can of beans and green beans and simmer long enough to heat them.

Oh man, that looks so awesome. I love that you're using canned beans, makes it extra quick and easy. The green beans in there look great too.

This was my favorite kind of soup as a kid. Only it was from Campbell's. I always needed to drink 2 glasses of water after a bowl because of all the salt. Now I can make my own with less salt!

looks like a good, comforting meal! yum! And i love that it doesn't take long to make it. I don't use an immersion blender. I mash half of the beans and add them a bit later to make the soup thicker. Whenever I make this, I add parmesan rind to the soup for more flavor. I keep parm rinds in my freezer for soups like these.

This looks so yummy... brings back memories of my mom's ham and bean soup... i love the green beans in it.. ham and beans is an excellent combination. Its also good with some chunks of potato if you want to make it more hearty... and some grated romano cheese.

I made this last night! It's a keeper. Leftover ham from the freezer. We skipped the ham bone and didn't cook it as long as called for - too much in a hurry, but it was still perfect. Both kids raved about it. I loved the green bean addition. Thanks!
