Cauliflower Rice
I have been a little bit obsessed with the idea of cauliflower 'rice' ever since I came across it! I have used cauliflower rice in a number of recipes that I have shared with you and I think that it warranted sharing a basic version that can be used in pretty much and dish that calls for rice. Cauliflower rice is basically cauliflower that has been 'riced' by grating into small rice like pieces and sauteed until it is lightly golden brown on the outside and nice and tender on the inside. Although cauliflower rice does not have the exact same texture as rice it is a light, healthy, low carb and tasty alternative and it's a great way to sneak an extra vegetable into your meal!

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 4

Riced cauliflower makes for a light, healthy, low carb and tasty alternative to rice!



ingredients
  • 1 small head cauliflower, cut into florets
  • 1 tablespoon oil
directions
  1. Rice the cauliflower by grating it on the larger holes on a grated or in a food processor. (The food processor makes this so quick and easy!)
  2. Heat the oil in a large pan over medium-high heat, add the cauliflower and cook, stirring occasionally, until the cauliflower rice is tender and slightly golden brown, about 7-10 minutes.

Tip: Rice the cauliflower on the weekend and store it in the fridge in a sealed container so that it is ready to go for quick weeknight meals.

I love this idea for a creative twist on rice. Looks delicious and simple- the food processor makes life so easy doesn't it? For whatever reason, whenever I heard of cauliflower rice, I was thinking to use my ricer after it was cooked. Glad I saw these instructions!

I just made my first batch of this last week - my cauliflower-obsessed and low-carb (diabetic) husband went NUTS for it. I tossed in tiny diced fresh chives for some color and flavor.

Oh, no! Now what am I going to do with the ricer I bought at a thrift store recently specifically to make Cauliflower Rice?! I think I might try the rice after cooking strategy and see what happens...
