Gnocchi are small potato dumplings that are light, soft and pillowy and they make a great alternative to pasta! This is a tasty one-pan dish with chicken and gnocchi in a creamy tomato sauce that’s easy to make and packed with flavour! The recipe starts out by cooking the chicken before building the sauce with onions, garlic, tomatoes, broth, cream and parmesan cheese. The gnocchi is cooked in the sauce in the same pan! I like to add a vegetable like spinach or frozen peas but they are optional. This tasty meal comes together in less than 30 minutes making it perfect for any night including busy work nights!
