Caesar salad and chicken caesar salads are two of my favourite foods and this quick and easy, one-pot, chicken caesar pasta is an amazing alternative! This recipe is as easy as cooking some chicken, adding pasta, broth, caesar dressing (link), along with plenty of parmesan cheese, and cooking until the pasta is done! The base recipe with chicken and pasta in a creamy caesar sauce is amazing and you can add extras such as: bacon, peas, baby spinach, sun-dried tomatoes, etc. and you could even serve it topped with fresh shredded romaine lettuce and croutons! No matter how you make it, this pasta is sure to be a hit and it’s easy enough to make on a busy work night!
Chicken Caesar Pasta
A quick and easy chicken pasta with all of the flavours of chicken caesar salad!
ingredients
- 1 tablespoon oil
- 1 pound of boneless and skinless chicken breasts or thighs, sliced
- salt and pepper to taste
- 1 onion, diced
- 3 cloves garlic, chopped
- 2 cups chicken broth (link)
- 1/2 cup heavy/whipping cream
- 1 cup caesar dressing (link)
- 8 ounces pasta (gluten-free for gluten-free)
- 1/2 cup parmigiano reggiano (parmesan cheese), grated
- 1 tablespoon lemon juice (optional)
- 1 tablespoon parsley, chopped (optional)
- salt and pepper to taste
directions
- Heat the oil in a large pan/skillet, add the chicken, seasoned with salt and pepper, and onion, and cook until the chicken is cooked, about 7-10 minutes.
- Add the garlic, and cook until fragrant, about a minute.
- Add the broth, cream, caesar dressing, and the pasta, bring to a boil, reduce the heat and simmer until the pasta is cooked, about 8-10 minutes, mixing every few minutes.
- Add the parmesan, mix and let it melt into the sauce.
- Mix in the lemon juice and parsley before seasoning with salt and pepper to taste and enjoy.
Option: Add 4 ounces bacon, cook before the chicken, crumble and add back near the end.
Option: Add 1/4 cup sundried tomatoes, thinly sliced, added near the end.
Option: Add 4 ounces baby spinach, mix in near the end, and let it wilt.
Option: Serve topped with shredded romaine lettuce, optionally tossed with more caesar dressing.
Option: Serve topped croutons!
Option: Add 1 tablespoon capers, along with the broth.
Option: Add 1/4 cup basil pesto (link), mix in at the end.
