This is a simple bean salad with peppers, corn, onions and fresh home made dressing consisting of: cilantro, lime, avocado, jalapeno, green onion and garlic. This salad takes almost no time to make, and it’s great both freshly made or made ahead of time! Enjoy it at home, or bring it to a picnic, cookout, barbecue, potluck, etc.
Mexican Bean Salad with Creamy Cilantro Lime Dressing
A bright and fresh bean salad with peppers and corn in a creamy avocado cilantro lime dressing!
ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (15 ounce) can red kidney beans, rinsed and drained
- 1 cup corn (fresh, or thawed, or canned)
- 2 bell peppers, diced
- 1/4 cup red onion, diced (or green onions)
- 1 jalapeno, finely diced
- 1/4 cup cilantro, chopped
- 1/4 cup queso fresco (or feta), crumbled (optional)
- 1 cup loosely packed cilantro
- 1/3 cup oil
- 1/3 cup lime juice (~2 limes)
- 1/2 avocado
- 1/2 jalapeno, coarsely chopped (optional)
- 1 clove garlic, minced
- 2 green onions, coarsely chopped
- salt and pepper to taste
