Chipotle Lime Chicken Salad

A chicken salad with bell peppers, corn, and beans in a creamy chipotle lime dressing!

Chicken salad is a salad where the main ingredient is chicken that’s served in a dressing, usually mayonnaise based, with other ingredients. This is a Mexican themed chicken salad with beans, bell pepper, corn, celery, and onions in a creamy chipotle lime dressing! I like to use chicken breasts (bone-in and skin-on is fine to save some money) that I poach and let cool before chopping but it’s also super easy to pick up a cooked rotisserie chicken! Once you have the cooked chicken, it takes almost no time to make the salad and it’s great fresh or made the day before and stored in the fridge overnight to let the flavours mix. You can throw it into a sandwich or a wrap, eat it by the spoonful, scooped with tortilla chips, etc.!

A chicken salad with bell peppers, corn, and beans in a creamy chipotle lime dressing!

ingredients
    For the chicken salad:
  • 4 cups chicken, cooked and shredded or sliced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup bell pepper, diced
  • 1 cup corn (fresh, frozen or canned)
  • 1/2 cup celery, thinly sliced
  • 1/4 cup red onion, diced
  • 1/4 cup green onion, sliced
  • For the chipotle lime dressing:
  • 1/3 cup plain Greek yogurt (or cottage cheese)
  • 1/3 cup mayonnaise
  • 2 chipotle chilies in adobo sauce
  • 1 teaspoon (smoked) paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 clove garlic, minced/grated
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon honey
  • salt and pepper to taste
directions
    For the chicken salad:
  1. Mix everything, mix in the dressing and enjoy!
  2. For the chipotle lime dressing:
  3. Mix everything well.
Option: Add 1-2 cups shredded romaine.
Option: Add cheese! (Such as crumbled cotija, shredded cheddar, etc.)
Option: Add 1 jalapeno (fresh, roasted or pickled), sliced or diced
Option: Add 1 polbano (fresh, roasted or pickled), sliced or diced
