Buffalo Chicken Salad

A chicken salad with all of the flavours of buffalo wings!

Normally when I think about a salad I think about a lettuce based salad but there are many kinds of salads and another common one is the chicken salad. A chicken salad is a salad made with a base of chicken that’s served in a dressing along with other ingredients and it can be enjoyed all by itself, in sandwiches, wrap, etc. This is a buffalo chicken wing inspired version where the chicken is in a buffalo hot sauce, cream cheese and mayonnaise dressing. Buffalo wings are often served with a side of carrot and celery sticks and they are incorporated into the salad in the form of shredded carrot and thinly sliced celery along with some sliced green onions. The wings are often dipped in a blue cheese dressing and so crumbled blue cheese is also included and I like to throw in some crispy bacon and shredded cheddar cheese! This buffalo chicken salad is great all by itself and I also enjoy serving it in sandwiches, wraps, and quesadillas!

Buffalo Chicken Salad

Prep Time: 15 minutes Total Time: 15 minutes Servings: 8

A chicken salad with all of the flavours of buffalo wings!

ingredients
  • 1/4 cup buffalo hot sauce
  • 4 ounces cream cheese, warmed
  • 1/2 cup mayonnaise
  • salt and pepper to taste
  • 4 cups chicken, cooked and shredded or sliced
  • 4 slices bacon, cooked and crumbled (optional)
  • 1/2 cup carrot, shredded
  • 1/2 cup celery, thinly sliced
  • 1/4 cup green onion, sliced
  • 1/4 cup blue cheese, crumbled (optional)
  • 1/2 cup cheddar cheese, shredded
directions
  1. Mix the buffalo hot sauce, cream cheese, and mayonnaise before seasoning with salt and pepper to taste.
  2. Mix the buffalo dressing, chicken, bacon, carrot, celery, green onion, blue cheese, and cheddar cheese.
Option: Replace some or all of the mayonnaise with sour cream or yogurt.
Option: Replace some or all of the sliced green onion with diced red onion.

Quick and easy tortilla wraps filled with buffalo chicken salad!

ingredients
  • 1 (12 inch) tortilla (corn tortillas for gluten free)
  • 1 leaf lettuce
  • 1 cup buffalo chicken salad
directions
  1. Assemble the wrap and enjoy!
Option: Add extras such as tomato slices, pickled jalapenos,etc.
