I’m always in for a tasty burrito and it’s so easy to make them at home! These pork adobo burritos are almost effortless when you use the slow cooker to cook the pork! The pork is as easy to make as rubbing a tasty Mexican adobo sauce all over a pork putt and tossing it into the crockpot, along with a can of coke, to cook all day long, before shredding it. The burritos are off to a good start with the scrumptious pulled adobo pork to which we add Mexican rice, beans, guacamole, cheese, cilantro and a creamy tomatillo ranch sauce! Yum! I like to lightly grill the burritos after wrapping everything up in the tortillas and you can’t go wrong smothering them in extra sauce!
Pork Adobo Burritos
Tasty pork adobo burritos with rice, beans, guacamole, cheese and a creamy tomatillo ranch sauce!
ingredients
- 3 pound pork shoulder or butt
- 1 cup Mexican adobo sauce
- 1 (12 ounce) can coke
- 12 large tortillas, warmed
- 3 cups Mexican rice
- 3 cups black beans, cooked or drained and rinsed
- 1 cup guacamole (or 1 large Avocado, sliced)
- 1/2 cup cilantro, coarsely chopped
- 1 cup queso fresco, crumbled
- 1 cup creamy tomatillo ranch sauce

- Rub the adobo sauce over the pork place in the slow cooker along with the coke and cook until fall apart tender, about 8-10 hours on low or 4-6 hours on high, before shredding and mixing the shredded pork back into the juices.
- Assemble the tortillas, wrap and grill before enjoying!
