Mexican Adobo Sauce

A tasty Mexican style seasoned chili adobo sauce that’s perfect as a marinade, a condiment, a dip, a salsa, a sauce and so much more!

Adobo is a sauce, marinade or seasoning that is common in Spanish cuisines and the Mexican style adobo typically contains dried chilies, garlic, oregano, cumin and vinegar. It is so easy to make your own, and a
good one, that once you try it you will never go back to store bought! You simply soak the dried chilis in just boiled water until they are tender and then puree all of the ingredients in a food processor or blender until smooth! Once you’ve made the adobo you can use it to marinate meats, as a sauce in your burritos, as a salsa to squirt onto your tacos, etc.

Prep Time: 5 minutes Soak Time: 20 minutes Cook Time: 5 minutes Total Time: 30 minutes Servings: 16(~ 1 cup or 16 1 tablespoon servings)

A tasty Mexican style seasoned chili adobo sauce that’s perfect as a marinade, a condiment, a dip, a salsa, a sauce and so much more!

ingredients
  • 4 guajillo dried chilis, stems and seeds removed
  • 4 ancho dried chilis, stems and seeds removed
  • 2 cloves garlic, peeled
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Mexican oregano
  • pinch of clove
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup cider vinegar
  • 1 teaspoon sugar
directions
  1. Lightly toast the chilies in a heavy bottom skillet over medium-high heat until fragrant, about 30 seconds per side before covering them in just boiled water and letting them sit until tender, about 15-20 minutes.
  2. Place everything in a food processor or blender and process until smooth, adding as much of the soaking water as required to get the desired consistency.

    Kevin, is this similar to the taste of Chipotle’s seasoning for its chicken — like in burrito bowls, etc.? If you can find out how to season chicken just like that, it is very popular now. You just wouldn’t believe how many Chipotle Chicken recipes are on the web, as many people try to imitate it and eat at home. Nowadays in US, it is getting too expensive for most people to eat out that much. So, I’m sending a BAT SIGNAL in the Kitchen to Kevin to see if he can replicate what all of us are begging for …
