Korean Grilled Steak Tacos with Pineapple Gochujang Salsa

Korean style grilled steak tacos with a fresh pineapple, lettuce, cucumbers, green onions and a tasty pineapple gochujang salsa!

Today I have a quick recipe, a great way to enjoy the Korean style grilled flank steak that I recently shared, in tacos! These tacos are super easy to make! You simply slice the Korean style grilled flank steak thinly, against the grain (or cut it into even smaller pieces), and throw it into warm tortillas along with some fresh lettuce, crunchy cucumber, sweet and tangy pineapple along with a tasty salsa! Since the steak is grilled, I like to grill the pineapple as well as this caramelizes it a bit, helping to bring out it’s natural sweetness! Continuing with the pineapple theme, the base of the salsa is grilled pineapple seasoned with onion, garlic, ginger, lime juice, cilantro, sesame seeds and some spicy gochujang paste for heat! These Korean style grilled steak tacos with pineapple gochujang salsa are the perfect outdoor meal for the warming weather!

Korean Grilled Steak Tacos with Pineapple Gochujang Salsa

Korean style grilled steak tacos with a fresh pineapple, lettuce, cucumbers, green onions and a tasty pineapple gochujang salsa!

ingredients
    For the pineapple gochujang salsa:
  • 2 cups pineapple
  • 2 tablespoons gochujang
  • 1 small onion, quartered
  • 1 teaspoon garlic, minced/grated
  • 1 teaspoon ginger, minced/grated
  • 1 lime, juice and zest
  • 2 tablespoons cilantro
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon toasted sesame oil
  • salt to taste
  • For the tacos:
  • 12 small corn tortillas, warmed
  • 1 pound Korean grilled flank steak, thinly sliced, warmed
  • 2 cups pineapple, optionally grilled and sliced
  • 2 cups lettuce, shredded
  • 1 cup cucumber, sliced
  • 2 green onions, sliced
directions
    For the pineapple gochujang salsa:
  1. Puree everything in a food processor.
  2. For the tacos:
  3. Assemble the tacos and enjoy!
Option: Grill the pineapple and onion before slicing and pureeing into the salsa!
Note: Gochujang is a Korean style fermented red chili paste that you should be able to find in the Asian section of a grocery store or in an Asian grocery store.
Tip: Start with a small amount of gochujang and add more slowly to get the salsa to the desired level of heat.
Option: Use carne asada instead of the Korean style steak.
Option: Add kimchi to the tacos!
Option: Add cheese like queso fresco, feta, etc.

    So delicious. And yes, grill the pineapple and onion – it provides more depth to the flavors.
