Chicken Mole Tacos

Chicken tacos with a tasty chocolate mole sauce onions and cheese!

Tacos are one of the greatest foods around and what better way to enjoy tacos than with chicken in a tasty mole sauce? These chicken mole tacos are super easy to make! It’s pretty much just cooked chicken mixed with mole sauce and thrown into warmed tortillas along with your favourite taco fillings. You can use leftover chicken that is either sliced or shredded; rotisserie chicken is easy but you can poach, roast, or grill some as needed. I like simple toppings for my tacos and pungent fresh onions, a bit of cheese, cilantro and a hit of lime juice are perfect!

Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes Servings: 4

Chicken tacos with a tasty chocolate mole sauce onions and cheese!

ingredients
  • 12 small corn tortillas, warm
  • 1 pound cooked chicken, sliced or shredded, warm
  • 1 cup mole sauce, warm
  • 1 onion, sliced
  • 1/2 cup queso fresco, crumbled
  • 1 handful cilantro
directions
  1. Assemble tacos and enjoy.
Option: Use leftover skillet chicken verde, taco lime grilled chicken, tequila lime grilled chicken, cilantro lime grilled chicken, etc.
Option: Use your favourite taco fillings like pico de gallo, salsa, guacamole, avocado, cheese, sour cream, etc.

    Honest, good, with a bit of spice ingredients…yum! The only thing I'd done is add a tiny dollop of non-fat sour cream, along with an extra drizzle of fresh lime juice. Thanks for the idea 🙂

    I hear you (sadly) on the lack of street food scene. Here in Chicago are laws are such that all the food has to be prepared in a commercial kitchen, it can't be made in the truck, so it really limits what gets sold.

    Your tacos look amazing though. I do love a good mole sauce.

    I have never had mole sauce, I am always afraid to try it. We don't really have street food here (Kansas City) either… except if you count run-of-the-mill hot dog stands.

    Maria-TO: I have been following the Toronto Underground Gourmet Market concept with enthusiasm. I really hope that something amazing will come out of it.

    krissy: The best place to get corn tortillas in Toronto is in the Kensington market. I have also seen frozen ones in the Saint Lawrence Market and Metro has some in their Selections brand.

    Kevin, I too am very jealous hearing about the very active street food scenes in other cities. We don't have any of that either. But I do think that between your chicken mole tacos and my tandoori chicken tacos, we'd be pretty successful should we start our own taco truck together!
