Barbecue pulled pork sandwiches just seem to scream summer to me but I always dreaded the thought of having the oven on all day when it was already so hot out. That all changed when I picked up a slow cooker as not only does it not radiate a lot of heat but it also produces perfectly tender pork every time. I had been craving some of that sweet, spicy, moist and tender bbq pulled pork for a few days so I dusted off my slow cooker and started to cook up some pork. This recipe is dead easy where you simply cook the pork in the slow cooker, pull it and mix some bbq sauce into it. You could make it even easier by using your favorite store bought brand of bbq sauce, but making your own is pretty easy and you get to make it just how you want it. This time I threw some chipotle chilies in adobo sauce into the bbq sauce both as the primary source of heat to add some smokiness. It just wouldn’t be a bbq pulled pork sandwich without a generous helping of coleslaw thrown in and once again I went with the make your own option. I served the pulled pork sandwiches with a side of crispy sweet potato fries.
BBQ Pulled Pork Sandwich with Slaw

- Put the pork in the slow cooker, pour 1/2 cup of the bbq sauce over it and cook on low heat for 8 hours.
- Remove the pork from the slow cooker and let cool.
- Meanwhile, skim the fat from the juices, place the juices in a sauce pan and simmer to reduce.
- Mix as much of the juices as you want into the remaining bbq sauce.
- When the pork is cool enough to work with, shred it with a pair of forks.
- Mix the pulled pork bbq sauce.
- Assemble sandwiches and enjoy.

I am afraid cooking with only 1/2 cup sauce isn't enough and I will end up with a burnt mess. Does the pork create juice when it cooks??? Do you add water or any other liquid to it during the cooking process?

ShannonM The pork will generate a lot of juices when it cooks in the slow cooker. I very often cook pork in it without any sauce so that I can make a variety of sandwiches from the same batch and it works out perfectly even like that.

Just want to say that anyone who does not own a slow cooker should rush out and get one NOW. right now I am doing chicken pieces in mine with onion and celery so that I can shred it and mix it with BBQ sauce for pulled chicken on this sandwich!

Joan: Roast the pork in an oven at 325F until it is fork tender, about 5-6 hours.

If you want to make a smaller portion I find that boneless pork rib meat is excellent for this. I just rub my spices all over, place in baking dish and wrap tightly with foil then bake at 250 for 6-8 hours. You can do it overnight. Drain off some off the excess liquid and fat then shred and use liquid smoke to give it an authentic pit BBQ taste. It's amazingly close to what I would get in Tennessee at my Grandparent's.

I realize this is a very biased.opinion, but I have lived my entire life in rural.west Tennessee, pretty much the home of pulled pork barbecuce. I implore you to PLEASE use an oil and vinegar based slaw, and not a mayo based slaw on pork barbecue. We do love our mayo, but it belongs in chicken salad or pimento cheese.
