Buffalo Chicken Grilled Cheese Sandwich

All of the flavours of buffalo chicken wings rolled up into a golden brown grilled cheese sandwich.

After the success of turning jalapeño poppers into grilled cheese sandwiches (aka the jalapeño popper grilled cheese sandwich ) I was wondering what other dishes I could turn into grilled cheese sandwiches. The basic idea is to take all of the flavours of a food that I am already totally into and use them in a grilled cheese sandwich. It did not take me too long to think of something perfect and it is interesting that it is also classic bar food, buffalo chicken wings, which are also one of my favourites. Buffalo chicken wings are chicken wings that are tossed in a spicy hot sauce and they are commonly served with a side of carrot and celery sticks with a blue cheese dip.
I knew exactly where I was going to start with the buffalo chicken grilled cheese sandwich and that was with a quick buffalo chicken salad. I made the buffalo chicken salad by mixing shredded chicken with some mayo, carrots, celery, red onion and and a healthy dose of hot sauce. From there I built in the grilled cheese aspects with sour dough bread, some cheddar cheese which melts nicely and a touch of blue cheese to get the dips flavours into the sandwich. I was also thinking that I could use some blue cheese dip in place of the mayo and the blue cheese but I wanted some nice chunks of blue cheese in the sandwich so that they would melt and get all nice and creamy and good. All that remained was to grill the sandwich up until the outside was golden brown and the cheese had melted. (Tip: One trick to help make sure that cheese melts nicely in a grilled cheese is to bring it up to room temperature before you grill the sandwich.)
I have to say that the buffalo chicken grilled cheese sandwich exceeded all of my expectations and I promptly devoured it! You really cannot go wrong with a spicy filling encased in melted, ooey, gooey cheese all wrapped up in a buttery lightly toasted bread! I particularly liked the way the buffalo chicken flavours came through and they were definitely made even better by being in a grilled cheese sandwich. I served the buffalo chicken grilled cheese sandwich with a side of carrot and celery sticks with some blue cheese dip .

Buffalo Chicken Grilled Cheese Sandwich

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 1

All of the flavours of buffalo chicken wings rolled up into a golden brown grilled cheese sandwich.

ingredients
  • 1/4 cup cooked shredded chicken, warm
  • 1 tablespoon hot sauce (such as Frank’s Red Hot)
  • 1/2 tablespoon mayo (optional)
  • 1 tablespoon carrot, grated
  • 1 tablespoon celery, finely sliced
  • 1 tablespoon green onion (or red onion), sliced or diced
  • 1 tablespoon blue cheese, room temperature, crumbled
  • 1 tablespoon salted butter, room temperature
  • 2 slices bread (gluten-free for gluten-free)
  • 1/2 cup cheddar cheese, shredded (or 2 slices), room temperature
directions
  1. Mix the chicken, hot sauce, mayo, carrot, celery, onion, and blue cheese in a small bowl.
  2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and finally the other slice of bread.
  3. Grill in a pan, preheated over medium heat, until golden brown on both sides and the cheese has melted, about 2-4 minutes per side.
Note: Hot sauces vary in heat, use as much of your hot sauce as required to get the level of heat that you like!

    One of the best ways to spice up this excellent dish is to serve it with asparagus and hollandaise sauce. I experimented with fried and then baked sweet potatoes too and they both offset the spicy chicken really well. Hope you like the ideas

    As always, looks super delicious! I would love to know how you prepare your bread for grilling because you always get such a great golden brown! Do you butter the bread? butter the pan? low heat? high heat? I think you could do a whole post just on your bread grilling techniques because they always look so good!

    Shan Cait: I am planning on doing a post about how I grill my sandwiches! For now: I like to heat the pan to medium, melt some butter in it until it is sizzling and starting to brown, reduce the heat to one notch below medium, add one piece of bread and swirl it around in the butter, top it with the fillings and the second slice of bread, buttered. From there it is just a matter of flipping after the one side is golden brown and then grilling the other side.

    @zola: Buffalo Wings originated in the city of Buffalo, New York. Hence the name. It's a spicy flavor based on cayenne pepper.

    DUVS: Any kind of cooked chicken will work. I often use leftover chicken for this sandwich but if you do not have any then you could poach or roast some chicken, either whole or just the breast etc. Another easy way to do it is to pick up one of those pre-cooked rotisserie chickens at the grocery store and shred the meat.

    Simply Amazing! While waiting for the chicken to cook I mixed the other ingrediants together.. It was fantastic and would make a great dip. We ate so much of it we had to make it again and then add the chicken.

    Made this tonight and my boyfriend had THREE of them!! We omitted the celery, blue cheese, and carrots. We also mixed the shredded cheddar in with the chicken mixture, AMAZING!!

    I finally made this just now and it's OMG amazing! Buffalo chicken is the best. I can't handle a lot of heat so I added a tbsp of cream cheese to the chicken/hot sauce mix and it's perfect! I might try Ranch next time, so good.

    Oh wow. This sandwich looks absolutely amazing. We don't really eat buffalo chicken over here in Australia but I like the sound of the combination of flavours. Oh, and Kevin, I also live in a closet (or as I say, shoebox) sized kitchen with a temperamental oven. Small kitchen owners unite!

    I tried a very similar recipe and had spectacular results! At the time I used day-old turkey left from thanksgiving, along with jalapeno hot sauce, blue cheese dressing, cream cheese, and lots of shredded Monterrey jack. Surprisingly delicious!
