Spinach and Artichoke Chicken Salad

A creamy chicken salad with all of the flavours of spinach and artichoke dip!

Spinach and artichoke dip is one of my favorites and it works well in a chicken salad! This recipe is the simple combination of the chicken salad and spinach and artichoke dip recipes. The chicken salad part includes: chopped chicken, celery, and onions and the dip part includes the spinach, artichokes, mayo and parmesan! Normally the dip includes cream cheese and you can use cream cheese in the recipe or you can use Greek yogurt, sour cream or pureed cottage cheese. This recipe only takes a few minutes to make and it’s great all by itself, or in lettuce leaf wraps, sandwiches, tortilla wraps, quesadillas, etc.

Spinach and Artichoke Chicken Salad

A creamy chicken salad with all of the flavours of spinach and artichoke dip!

ingredients
  • 4 cups chicken, cooked and shredded or sliced
  • 1/2 cup celery, thinly sliced
  • 1/4 cup red onion, diced
  • 1 cup baby spinach, coarsely chopped
  • 1/2 cup artichoke hearts, coarsely chopped
  • 1/3 cup cottage cheese (or plain Greek yogurt)
  • 1/3 cup mayonnaise
  • 2 tablespoon parmigiano reggiano (parmesan cheese), grated
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced/grated
  • 2 tablespoons basil, thinly sliced (optional)
  • salt and pepper to taste
directions
  1. Toss the chicken, celery, red onion, spinach, and artichokes in the mixture of the cottage cheese, mayonnaise, parmesan, lemon juice, dijon mustard, garlic, basil, salt and pepper, and enjoy!
Option: Puree the cottage cheese in a food processor until smooth.
Option: Replace the cottage cheese with whipped cream cheese!
Option: Add 1/4 cup sun-dried tomatoes, sliced.
Option: Add 1/4 cup bacon, cooked and crumbled.
