Today’s recipe is a simple chicken salad sandwich; a great way to enjoy summer with fresh homemade basil pesto and field ripened tomatoes! Yum in a bun! The base of this recipe is the cooked chicken and you can either use leftover rotisserie chicken or you could poach some chicken and shred it. I like to use a homemade basil pesto so that it’s super fresh and packed with summery flavours! (But you could also use store bought pesto.) The final components of these sandwiches are slices of field ripened beefsteak tomatoes and fresh buffalo mozzarella! What a magical flavour combination!
I sometimes bush the buns with garlic butter!
Pesto Chicken Salad Sandwich
Fresh basil pesto chicken salad in sandwiches with field ripened tomatoes and buffalo mozzarella! Summers bounty in a bun!
ingredients
- 1 pound chicken, cooked and shredded
- 1/2 cup fresh basil pesto
- 4 buns (gluten-free for gluten-free)
- 1 large beefsteak tomato, sliced
- salt and pepper to taste
- 8 ounces fresh mozzarella, sliced
directions
- Assemble the sandwiches and enjoy!
Option: Place the sandwiches under the broiler (or in the grill) briefly to melt the cheese!
