Pesto Guacamole BLT (Bacon, Lettuce and Tomato) Sandwich

A bacon lettuce and tomato sandwich with a summer-y fresh basil pesto guacamole.

This has to be one of my favourite times of the year with all of the fresh field ripened tomatoes around and my favourite way to enjoy them has to be in a BLT or a bacon, lettuce and tomato sandwich. BLT sandwiches never get boring and I like to experiment with them adding different things. Two of the best ways to go are with a BLT with basil mayo or a BLT with avocado or guacamole and so when I made the pesto guacamole I knew that I would have to use it in a BLT! You just cannot go wrong combining fresh rip tomatoes, basil pesto and avocados with bacon in a sandwich! I will definitely be enjoying a lot of theses pesto guacamole sandwiches over the next few days!

Cook Time: 10 minutes Total Time: 10 minutes Servings: 1

A bacon lettuce and tomato sandwich with a summer-y fresh basil pesto guacamole.

ingredients
  • 2-4 strips bacon
  • 2 slices bread
  • 1 large ripe tomato
  • 1 leaf lettuce
  • 2 tablespoons pesto guacamole
directions
  1. Cook the bacon until crispy and set on paper towels to drain.
  2. Meanwhile slice the tomato and optionally toast the bread.
  3. Assemble Sandwich and enjoy!

    That is so not enough lettuce for me. I can eat a sandwich with just mayo and lettuce.
    Kevin, I have a question not related to this. The thai green curry comes in a plastic round sort of jar with the curry paste in a plastic bag stuffed inside. Am I supposed to take the curry paste and transfer it all to the sort of jar thing or leave it in the plastic bag and in said jar? Please help this silly old woman. 🙂

    Anonymous: Yep, you could definitely add more lettuce! You can leave the curry paste in the bag in the jar or transfer it from the bag to the jar.
