Summer is the season for salads! Normally I think about lettuce and vegetable salads but chicken salads are also perfect for summer! A chicken salad normally has a base of cooked and shredded or diced chicken that is mixed with a dressing, often a mayonnaise based dressing, that is served as is or in a sandwich, wrap, etc. This chicken salad uses mashed avocado for the dressing, with a touch of mayo, and it’s seasoned with bright lemon juice, fresh parsley and onions! There are so many different options for this salad, from using lime juice, adding jalapenos, celery, parmesan, etc. and two of my favourites are to add cooked bacon or sun-dried tomatoes! This avocado chicken salad is amazing in a sandwich and it easy to make a little ahead of time to bring on a picnic or lunch on the beach.
Add sun-dried tomatoes or bacon!
