With the warming weather it’s nice to do some more grilling and this chicken shawarma quinoa tabbouleh salad bowls uses some of my favourite summer recipes! The center piece of this salad is the grilled chicken shawarma, a quick and easy grilled chicken breast in a tasty shawarma seasoning. The base of the salad is a quinoa tabbouleh salad with cucumber, tomatoes and plenty of fresh herbs! Next up is some creamy hummus along with salty feta and kalamata olives. The dressing is a super simple tahini and lemon based sauce with garlic and salt. This chicken shawarma quinoa tabbouleh salad is light, healthy and just packed with flavour!
Making all of the components to for this salad can take a bit of time, especially if you are starting from scratch, and I like to make as much of it as I can the day before which leaves simply assembling the salad on the day of.
Chicken Shawarma Quinoa Tabbouleh Salad Bowls
A quinoa tabbouleh salad topped with grilled chicken shawarma in a light and tasty tahini dressing!
ingredients
- 4 cups quinoa tabbouleh
- 1 pound grilled chicken shawarma, sliced
- 1/2 cup hummus
- 1/4 cup kalamata olives
- 1/4 cup feta, crumbled
- 1 avocado, sliced
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 1 small clove garlic, minced/grated
- salt to taste
- water to taste

- Assemble the salad, pour on the dressing and toss to coat before enjoying!
- Mix everything well adding enough salt to balance the lemon and enough water to get the desired consistency.
