Summer is the season of salads and the star of most great salads is a tasty dressing with this cilantro lemon tahini dressing is a fabulous one! Tahini is a paste made from ground sesame seeds (very similar to peanut butter) and it’s it can be used in many different things including sauces and dressings. I was hooked on tahini sauce, a simple mixture of tahini, lemon juice and salt, after the first taste and if you thin it out a bit more it makes for a tasty dressing! There is just something magical about the mixture of creamy tahini tart lemon and salt! For this dressing I add plenty of fresh cilantro as a flavouring and you can change things up by swapping the cilantro with other herbs such as parsley, basil, etc. Cilantro of one of my favourite herbs and using it in this dressing makes it perfect for many Mediterranean and Mexican flavoured dishes!
Cilantro Lemon Tahini Dressing
A light tahini dressing with plenty of bright lemon juice and cilantro!
ingredients
- 1/3 cup tahini
- 1/4 cup lemon juice
- 1/4 cup cilantro, chopped
- 1 clove garlic, minced/grated
- water to taste
- salt to taste
directions
- Puree everything along with enough water to get the desired consistency, before seasoning with salt to taste.
Option: Replace some or all of the cilantro with parsley.
Option: Add a touch of a sweetener like maple syrup or honey.
