Cilantro Lime Vinaigrette

A light and fresh vinaigrette with cilantro and lime.

I have been into the cilantro lime combination for a long time now and I use it in many different things from marinades to sauces to soups, etc. and I also use it as a garnish on things like rice bowls, tacos, tostadas, fish, sandwiches, etc. The other day I had a thought: Wouldn’t it be great if I could bottle the amazing cilantro and lime flavours so that I could pour them all over everything? With that idea this vibrant, light, bright and super tasty cilantro lime vinaigrette was born! I kept the vinaigrette nice and simple using plenty of fresh cilantro along with the lime juice, some oil, garlic and some jalapeno for a touch of heat. I don’t know if you can bottle magic but you can certainly bottle the magical combination of cilantro and lime!

Cilantro Lime Vinaigrette

Cilantro Lime Vinaigrette

Prep Time: 5 minutes Total Time: 5 minutes Servings: 1cup

A light and fresh vinaigrette with cilantro and lime.

ingredients
  • 1 cup loosely packed cilantro
  • 1/4 cup oil
  • 1/4 cup lime juice (~2 limes)
  • 1/2 jalapeno, coarsely chopped (optional)
  • 1 small clove garlic, minced
  • salt and pepper to taste
directions
  1. Puree everything in a food processor until smooth.

    Super easy to make. I'm buying a small food processor just so that I can give this a whirl. Also, the flavor combo of lime and cilantro pair well with Asian food.

    I like to pdf recipes so I can put them in folders on my iPAD and use in the kitchen. Why can't your recipes be printed? I want them in categories.

    What kind of oil did you use? I want to assume it's olive oil, but just asking to make sure. I will be making this soon. Very excited :]] !!

    This sounds similar to something I do!

    Modified from an Epicurious recipe that I came across once, I now freeze ice cube trays full of this pureed sauce/dressing:

    Purée 1 1/2 cups of cilantro, 2 tbsp of oil, 1 tbsp of chipotle chiles with some adobo sauce, 1 tbsp of water, 1 tbsp of lime juice, 1/2 tsp cumin, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth.

    I use this every time I make guacamole, mango salad, salsa….you get the idea. 🙂

    This is a perfect salad dressing for our family. Lately , I've been including some of the peel in the vitamix for a bolder flavor
