With Cinco de Mayo right around the corner I have been thinking about Mexican cuisine a lot and a common side for Mexican themed meals is rice. I know what you are thinking but rice does not have to be boring since you can easily jazz it up with fresh ingredients with one of my favourites being cilantro and lime rice! I make cilantro and lime rice fairly often but I recently had an idea, why not add some creamy avocado to the rice? Avocado is the perfect complement to the cilantro and lime flavours, it’s nice and green, light, fresh and it really takes the rice to a whole new level! This avocado cilantro lime rice is an amazing side to any meal and it also works really well in things like burritos, salad bowls, casseroles, etc. The next time you are going for rice as a side dish skip that Chipotle copycat cilantro and lime rice and go for this avocado cilantro lime rice!
Avocado Cilantro Lime Rice
Cilantro lime rice with avocado that is so nice and creamy, fresh and vibrant!
ingredients
- 1 cup long grained rice
- 2 cups water
- 1 large avocado, stoned, peeled and mashed
- 1/4 cup cilantro, chopped
- 1 lime, juice and zest
- salt to taste
directions
- Bring the rice and water to a boil, reduce the heat and simmer, covered, until the rice is cooked and the water has bee absorbed, about 20 minutes.
- Mix the avocado, cilantro and lime juice and zest into the rice before seasoning with salt to taste.
Option: Saute some onions and garlic in oil and add them to the cilantro lime rice.
Option: Replace the rice with brown rice, cauliflower rice, quinoa, etc.

How long will this rice hold its green color in the fridge before the avocado starts to turn color? I would like to make it a day in advance. I know lime and the pit of the avocado holds the color, but not for very long. Please advise.

I cannot believe that I have not posted on this recipe! I've been making this for a couple of years now and it's always a huge hit! I haven't changed the recipe because it doesn't need any alterations. This is a delicious rice that goes with a lot of different Mexican/Thai dishes. WE LOVE THIS RICE!!
