Cilantro Lime Grilled Shrimp

Shrimp in a tasty, light and fresh cilantro lime marinade that is grilled to perfection.

Cilantro and lime has to be one of my favourite flavour combos and my favourite way to enjoy it is on shrimp! I make cilantro lime shrimp year round but the summer is the best since you can do them on the grill. One of the great things about the cilantro and lime flavour combo, other than being tasty, is that it is so light and fresh and perfect for summer or reminding you of summer in the dead of winter. This recipe is really easy, you simply make the marinade, marinate the shrimp, skewer them and grill them. All said, excluding the marinate time, it takes less that 20 minutes from the time you start until you can be popping these bad boys into your mouth like candy! You can enjoy these shrimp by themselves or in other dishes like tacos, nachos, pasta, etc.

Prep Time: 10 minutes Marinate Time: 30 minutes Cook Time: 10 minutes Total Time: 40 minutes Servings: 4

Shrimp in a tasty, light and fresh cilantro lime marinade that is grilled to perfection.

ingredients
  • 1 pound shrimp, shelled and deveined
  • 2 limes, juice and zest or 1/4 cup lime juice
  • 1 tablespoon oil
  • 2 tablespoons cilantro, chopped
  • 1/2 jalapeno, coarsely chopped (optional)
  • 1 clove garlic, grated
  • salt and pepper to taste
directions
  1. Marinate the shrimp in the mixture of the lime juice, zest, oil, cilantro, jalapeno, garlic, salt and pepper for 30 minutes.
  2. Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.

    Saw this in the morning, made them tonight! We were planning on having shrimp anyway so it worked well. I added a touch of chipotle powder (about 1/4 tsp). These were great, Kevin!

    Hello Kevin,

    I'm glad I came across this post, because I usually make grilled shrimp in a similar way. Although, I've never had them with tacos before… Must be good!

    Unfortunately I'm not a fan of cilantro. Can you suggest a substitute? The recipe looks fabulous and can't wait to try….once the snow melts and the grill is up and working. Thanks Kevin, so glad to have found you.

    Lexy: The cilantro is kind of key to this recipe but you could try something like parsley and lemon instead of cilantro and lime or pesto and lemon but they would both be pretty different, but still good.

    I love cilantro grilled shrimp! I make it with an orange juice tequila reduction, along with brown rice with cilantro and lime zest mixed in. And, of course, margaritas!

    I ran across this while looking for something different, you see I cook for my family every single day and I am pretty good! I have been working a lot lately and needed something new and not to involved. I made the crema and the slaw to go with the shrimp and the crema, well I am speechless because it is that good! Dude bottle that stuff!

    I've made this several times and it's always a huge hit! I don't always have access to an out-door grill so I make these on an indoor Lodge cast iron grill pan and it works magnificantly!

    Made this last night. YUM!!!!! Served as a taco on Califlower crepes sold at Costco. No Carbs. Added chopped onion, avocado and salsa. Nothing bad about this meal.
