Chipotle Lime Grilled Shrimp

Grilled shrimp on a stick, marinated in a smoky chipotle lime marinade.

I have really been into grilling this summer and one of my favourite things to grill has to be these chipotle lime grilled shrimp. They are so easy to make and so good that it is hard to resist grilling up a batch every week. The shrimp is marinated in a simple mixture of smoky and spicy chipotle chilies and sour lime juice along with a touch of garlic before quickly grilling it to perfection! Not only is this tasty chipotle lime grilled shrimp perfect for eating right off the stick but it is also fabulous to use in other dishes (see below). This recipe is my go-to version that I usually use but I also like to change things up every once in a while and some great options are adding a touch of honey, tequila or cilantro. No matter how you grill this chipotle lime shrimp up this summer it is sure to please, and disappear quickly, so make a double batch!

Grill with lime wedges so that you can add a splash of lime juice right from the stick. You have to love meat on a stick!

I made some chipotle lime grilled shrimp this weekend and took the opportunity to update the photos in this recipe with the new ones appearing above and the original one appearing below.

Chipotle Lime Grilled Shrimp

Prep Time: 5 minutes Marinate Time: 20 minutes Cook Time: 10 minutes Total Time: 35 minutes Servings: 4

Grilled shrimp on a stick, marinated in a smoky chipotle lime marinade.

ingredients
  • 1 pound shrimp, peeled and deveined
  • 1 chipotle chili in adobo, chopped
  • 2 teaspoons adobo sauce
  • 2 limes, juice and zest
  • 2 cloves garlic, chopped
  • 1 teaspoon cumin, toasted and ground
  • salt and pepper to taste
directions
  1. Marinate the shrimp in the mixture of the remaining ingredients for at least 20 minutes.
  2. Skewer the shrimp and grill over medium-high heat until cooked, about 1-3 minutes per side.
Tip: Add the chipotles to the marinade one at a time and taste test for heat.
Option: Add 1 tablespoon honey to the marinade.
Option: Add 2 tablespoons cilantro to the marinade.
Option: Add a splash of tequila to the marinade.

    This is another great recipe, Kevin! I like that you actually used the tasty adobo sauce that comes with the chipotle peppers. So often recipes just call for the peppers and the sauce is wasted.

    Sounds delicious! I've always had trouble with my chipotle chiles in adobo.. you never know how spicy they are going to be!!! sometimes 1 is enough… sometimes 2….

    suzielarose: I normally get the regular stuff like milk, eggs, bread, canned goods etc. at Food Basics as they are cheap. I then head down to the farmers market at the St Lawrence market on Saturday to get any seafood, meats, in season fruits and vegetables. There is a nice specialty import shop in the basement with lots of hard to find ingredients as well. If I want some good feta I head up to Greek Town on the Danforth.

    You mention using a powdered form of chipolte. How much would you use to equal the one chipotle chili in the recipe?

    Sue: Use 1-3 teaspoons of the dried chipotle chili powder instead of the whole chipotle chili in adobo depending on how much you like heat.

    This sounds like it is a perfect recipe to add to any summer cookout! Chipotle lime seems to be one of the hottest flavors for summers. They look like they would be very simple to prepare ahead and have ready to throw on the grill just before the guests arrive.     Made this last night for supper. Didn't have enough shrimp for both Dahling and me, so I used the marinade on some chicken tenders! It was amazing! I made some Rotel Rice, served the shrimp and chicken on top of that, and then topped it all with some leftover corn, black bean and avocado salsa! Oh yeah!!!

    Kevin, Great recipe But i think you should of reiterated the point about using LIME in a marinade. To make sure you do not marinade past an hour. I can't believe no one has made this comment.

    We made this last night for dinner and the recipe is fantastic and super easy. We oiled the grill a little to make sure the shrimp didn't stick, and then drizzled the cooked shrimp kebabs with a little olive oil to 'glisten it up' a bit. Truly wonderful! And the grilled limes really add to the dish, as the grilled lime juice had such concentrated flavor when squeezed on the shrimp. We'll definitely make this again. Another great recipe – thank you Kevin.

    This recipe is a new family staple! Made it last week, and have it marinading in the fridge now for dinner. I divide the marinade in half because I like shrimp but my husband doesnt (I know– he is crazy). I use his half for chicken. Anyways, thanks again. Delish.

    Absolutely delicious! I assume you meant to toast coriander and crush. I just added cumin instead because I was in a bit of a hurry. I can't wait to make this again! One of my favorite dishes now 🙂
