I have been on a salmon kick lately and up next is this super quick, easy and tasty cilantro and lime salmon! Cilantro and lime has to be one of my favourite flavour combinations, which I use it on pretty much everything, and when I saw a similar recipe for a spicy garlic lime baked salmon on A Spicy Perspective I realized that it was past time that I gave salmon the cilantro and lime treatment! This recipe could not be easier, you simply make the sauce, spread it on the salmon and bake or grill it for 10 minutes and you are in cilantro and lime flavoured salmon heaven! The cilantro and lime sauce is basically the same as my cilantro and lime vinaigrette, which is amazing on pretty much everything, and it comes together in less than 5 minutes making this dish perfect for even the busiest of nights but it’s so good that it is sure to impress any dinner guests!
Cilantro and Lime Salmon
A quick and easy salmon fillet baked with a tasty cilantro and lime sauce.
ingredients
- 2 tablespoons oil
- 1 lime, juice and zest
- 2 tablespoons cilantro, coarsely chopped
- 1/2 jalapeno, coarsely chopped (optional)
- 1 clove garlic, coarsely chopped
- salt and pepper to taste
- 2 pound salmon fillet
directions
- Puree the oil, lime, juice and zest, cilantro, jalapeno and garlic in a food processor until smooth.
- Place the salmon on foil on a baking sheet, pat dry, season with salt and pepper, spread on the cilantro and lime mixture and bake in a preheated 400F/200C oven (or barbecue) until just cooked, about 10-15 minutes.
Option: Marinate the salmon in the cilantro and lime mixture for 30 minutes before baking.

I don't care for the flavor of cilantro. Might I substitute parsley, chopped broad leaf, instead? Would that affect the ultimate flavoring that much?

Deanna: You can change the herb but it will completely change the flavour of the salmon. I am thinking that a basil and lemon version with garlic and no jalapeno would also be good!

I always undercook or overcook my salmon, because the fillets are always very thin on one end and thick in the middle. Any tricks on how to make the whole filet perfectly cooked? Thanks
I added a brick of cream cheese and 1 Tablespoon of Ranch Dressing Mix, otherwise way too bitter.

This salmon dish is so delicious! I made a one-dish meal by adding sliced zucchini to the foil package. The cilantro jalapeno lime combination is so wonderful and I will be using this on so many things this spring. It’s an outstanding dressing as well. Thanks for all the the great recipes.
I am not clear as to whether I should make a foil packet or just line the pan with foil?
