Cinco de Mayo is right around the corner!
Cinco de Mayo is a day celebrated in both the US and in Mexico. In the US it originated with Mexican-American communities in the American West as a way to commemorate the cause of freedom and democracy during the first years of the American Civil War and it has since spread. In Mexico the day commemorates the Mexican army’s victory over French forces at the Battle of Puebla on May 5, 1862. Celebrations in the US typically include Mexican-American culture, food, music and dancing.
Mexican cuisine is definitely one of my favourites and Cinco de Mayo is the perfect excuse to pull out some of my favourite Mexican dishes and to try a few new ones! I am kicking things off a little early this year by testing some new recipes and gathering up a list of some of my favourite Mexican dishes and Mexican inspired dishes to share with you! I must apologize for the length of this list, there are just so many great options starting from breakfast or brunch, to snacks, main courses and sides and lets not forget plenty of salsas, tacos and quesadillas! You really can’t go wrong celebrating Cinco de Mayo with tasty food and each of these recipes are sure to please!

Kevin, I should have known better than to look at your blog an hour before lunch! I am totally drooling right now and cannot wait to try your bacon guacamole for starters, quickly followed by the fajita burger (perhaps bacon guac ON the fajita burger? My life may have just flashed before my eyes in a good way :). Puts the carnitas recipe I just posted to shame!

Do you know 5 de Mayo was the battle of the mexicans against the french army, that's why it's a holiday but is not as big here in Mexico, our independence and biggest party is in semptember 😀 I said this because a lot of people thinks is our independence day and is not.
A very traditional dish for semptember is the stuffed chile, it's a chili stuffed with ground beef, raisins, acitron (caramelized fruit) piñones, sometimes battered with egg, but always wih a sauce made of nuts, cheese, sometimes sour cream, and sprinkle with pomegranate. At the end the dish will have the colors of the flag, green from the chili, white form the sauce and red from the pomegranate 🙂

Kevin, I love your recipes and just downloaded the 2015 book. I especially appreciate the nutritional info. I am on weight watchers right now and knowing the nutritional info really helps me plan and still stay on track. Keep up the good work!
