I have been thinking about brunch menus with Mother’s Day coming up and with Cinco de Mayo just past I naturally combined the two to make these huevos ranchers style breakfast sandwiches. These breakfast sandwiches include all of the ingredients and flavour of huevos rancheros including refried beans, guacamole and salsa ranchera in addition to fried eggs. Even if you are not a cook, these huevos rancheros breakfast sandwiches are super easy to make and take little time but mom is sure to enjoy them and appreciate the effort! Just make sure to wipe the dribbling egg yolk from your chin before brining mom her breakfast in bed and I swear that I won’t tell her that you inhaled several before brining her hers!

Huevos Rancheros Breakfast Sandwich
Huevos rancheros served breakfast sandwich style in an English muffin with refried bean, avocado, salsa ranchera and a fried egg!
ingredients
- 1 egg
- salt and pepper to taste
- 1 English muffin (gluten-free for gluten-free), optionally lightly toasted
- 2 tablespoons refried beans
- 2 tablespoons guacamole
- 1 tablespoon salsa ranchera
directions
- Fry the egg as desired, season with salt and pepper to taste, spread the refried beans on one side of the English muffin and the guacamole on the other, place the egg on one side and top with the salsa and the other half of the muffin.
Option: Add bacon!

I am a fan and a follower, and have made many of your recipes. I love what you’ve chosen to present to us!
As a mom, I have to comment.
Breakfast sandwiches are kind of a grab and go thing. Like, something great to eat when you’re on the run. Delicious as they may be, most moms, on moms day, like to have a breakfast to linger over….maybe with coffee or tea, and some juice.
Don’t rush your mom, like you want her to eat fast, so you can run! (Although you may want to). Make it open faced, use two eggs, and let her prolong the experience and savor the goodness. That’s what will make her mom’s day special. Give her that time, then rush on to whatever else you want to do.
But, this is a great breakfast sandwich, and I wish I had one, RIGHT NOW!

I love a soft egg yolk, but if you want a breakfast sandwich you can eat without making a mess, it’s easy! Fry your egg and break the yolk when the bottom has gotten a bit solid. Spread the yolk over the entire white, Cook a bit more and flip. Remove quickly and add to sandwich. This way the yolk will be in every bite, and you won’t need to deal with egg on your face.
