As much as I enjoy eating grilled meat right off the stick it is always fun to use it as an ingredient in another dish and as I was munching on the grilled jerk shrimp and pineapple skewers I had several ideas! The first idea was for some grilled jerk shrimp tacos with a pineapple salsa which sounded so good that I had to make it right away. In addition to the shrimp and pineapple salsa I wanted one other ingredient, a simple red cabbage slaw both for the colour and for the crunchy texture. At first I was just going to toss the cabbage in some crema for creaminess but thoughts of the Caribbean and pineapples inspired me to make a pina colada crema flavoured with pineapple, coconut and of course rum! The combo of spicy jerk shrimp, sweet and juicy pineapple salsa, crunchy cabbage and the creamy pina colada crema in these tacos is simply divine!
I do so enjoy using fruit, especially grilled fruit, in savoury dishes like this in the summer!

Kevin, these are just stunning!
These wouldn't last 5 minutes in my house!
Steph: They didn't last much longer in mine! 🙂
Wow, these both look so tasty!
Love the salsa and crema.
Cooooompletely falling apart right now.
you always have the best combination Kevin
Pina Colada Crema. Say no more. I want that on EVERYTHING!
We love jerk anything, so this is perfect for my family!
Yay for shrimp tacos!! Perfect summer fare.
love the idea of the pina colada crema…
Kevin you are KILLING ME!
Seriously, I get your messages just as I'm thinking of what to make for dinner. Yet another "Kevin" recipe to try out.
I tried the cheeseburger topped with poppers this weekend. O.M friggin GEEE!
Oh shrimps. How I love shrimps. I always try to find a non-kosher! restaurant if I go out to eat just so that I can eat shrimps. I never ate non-kosher until I came to Israel. Shame on me.
Please somebody tell me what poppers are!
Judy Goldin: Jalapeno poppers are jalapenos stuffed with cheese, commonly cream cheese and or cheddar, and they are either breaded and fried until crispy or wrapped in bacon and grilled.
And cooked jalapeños are not nearly as hot as raw ones in salsas. Our local Chinese buffet restaurant makes a pork dish with jalapeños in it and each pepper is sliced in half lengthwise so you eat the whole half a pepper and they aren't nearly as hot when cooked, same as the poppers. But they taste good. In Mexico you can also get canned ones that are not breaded but stuffed with picadillo (ground beef cooked with onions, peppers, and spices) and atun (tuna fish) and they are great little snacky foods. They are pickled (en escabeche) or mildly marinated one might call them. Great stuff.
We love jerk anything in our house! And this combo is quite the winner! 🙂
I have to make a correction: Kevin didn't top his burgers with poppers. The poppers were in the burgers. Somehow I missed that, sorry for the misquote. I just saw that yummy burger and I knew I had to try something like it.
So, I made a burger and topped with with cream cheese poppers. It was still a heavenly experience and I couldn't have done it without you Kevin! Nor would have I have tried the Black Forest Pancakes. I bought cocoa powder (Which I never do) because of your recipe!
Oh sweet heavenly perfection! I have to have these. Now. No, yesterday. It will have to suffice to make them this weekend when our dear friends come over for dinner and a swim.
oxox
These look fantastic. And I love the pictures of the purple/black corn chips in the background. They are still trying to gain popularity here in Oz as everybody knows that "corn only come in yellow right"…. 🙂
I am so making this this upcoming weekend!!!
Kevin, these tacos are the perfect combination of flavors. I need to make these for dinner.
prepared this dish today for us & my parents : it was sùper !! I made the recipe for 6, we ate it with 4 and there was nothing left B-)
Joan: Glad you enjoyed them! Mine disappeared quickly as well! 🙂
This looks amazing! I love shrimp in pretty much every dish. The pina colada cream looks great, too! I'm in Hawaii right now and there are just fresh pineapples practically following me home from the store.
What a fresh perfect for summer taco! Great idea 🙂
Is your recipe for Pineapple Salsa just grilled pineapple with diced red pepper? Is that your only ingredients for the salsa? TY

Just made this right now…delish!! Flavor combos are perfect
Made these last night. Looked just like the picture! Great for summer! (O, and I cheated—I used pre-made jerk seasoning mixed with olive oil for my marinade. Worked great.)
It was tasty with a little bit of a kick but it was the perfect amount of heat. My family loved them and gone real quick, lol. Thank you for sharing this delicious recipe!
I am a new fan, love your recipes!
I love the Pina Colada Crema! This looks so delicious!
It sound so good to be true for "pina colada crema" recipe but I'm not sure which kind of pineapple for making pina colada crema. Please response back for question is which is chunk, crushed, or fresh pineapple? Thanks
John Xfire: I like fresh but any will work.
I found your recipe on Pinterest. Love finding new Caribbean Food dishes. Can't wait to see more. I'd love to hear your take on some of the dishes on http://caribbeanfood.com.
I cooked this last night and it was fantastic!!! I marinaded the shrimp for about 5 hours and cooked them on the grill. Thank you!
Oh!! I made this last year and it was INSANELY good. I have a bunch of ripe pineapples in the yard just waiting to be used, and I think I will appropriate one to revisit this awesome recipe 😀
The lime/vinegar cooked my shrimp. 🙁
