Jerk Shrimp Tacos with Pineapple Salsa, Slaw and Pina Colada Crema

Spicy grilled jerk shrimp tacos with grilled pineapple salsa, slaw and cool and creamy (and rummy) pina colada crema.

As much as I enjoy eating grilled meat right off the stick it is always fun to use it as an ingredient in another dish and as I was munching on the grilled jerk shrimp and pineapple skewers I had several ideas! The first idea was for some grilled jerk shrimp tacos with a pineapple salsa which sounded so good that I had to make it right away. In addition to the shrimp and pineapple salsa I wanted one other ingredient, a simple red cabbage slaw both for the colour and for the crunchy texture. At first I was just going to toss the cabbage in some crema for creaminess but thoughts of the Caribbean and pineapples inspired me to make a pina colada crema flavoured with pineapple, coconut and of course rum! The combo of spicy jerk shrimp, sweet and juicy pineapple salsa, crunchy cabbage and the creamy pina colada crema in these tacos is simply divine!

Jerk Shrimp Tacos with Pineapple Salsa, Slaw and Pina Colada Crema

Jerk Shrimp Tacos with Pineapple Salsa, Slaw and Pina Colada Crema

Prep Time: 15 minutes Marinate Time: 20 minutes Cook Time: 10 minutes Total Time: 45 minutes Servings: 4

Spicy grilled jerk shrimp tacos with grilled pineapple salsa, slaw and cool and creamy (and rummy) pina colada crema.

ingredients
  • 1 pound (16-20) shrimp, peeled and deveined
  • 1/2 cup jerk marinade
  • 2 cups cabbage, sliced
  • 1/2 cup pina colada crema (see below)
  • 12 small corn tortillas, warmed
  • 2 cups grilled pineapple salsa (I added 1/2 red pepper, diced this time.)
directions
  1. Marinate the shrimp in the the jerk marinade for at least 20 minutes and up to over night.
  2. Skewer the shrimp and grill over medium-high heat until cooked, about 1-3 minutes per side.
  3. Toss the cabbage in half of the crema.
  4. Assemble tacos by placing the slaw on the tortillas, followed by the pineapple salsa and shrimp finally topping with a drizzle of crema.

Prep Time: 10 minutes Total Time: 10 minutes Servings: 1cup

All of the flavours of pina colada in a crema that is perfect for jerk tacos and other Caribbean inspired dishes!

ingredients
  • 1/2 cup sour cream (or Greek yogurt)
  • 3 tablespoons pineapple
  • 2 tablespoons coconut cream
  • 1 tablespoon rum (or 1 teaspoon rum extract) (optional)
directions
  1. Puree everything in a food processor and enjoy!
Tip: If you cannot find coconut cream, open a can of coconut milk without shaking it and use the thick white part on the top which is coconut cream.

    Oh shrimps. How I love shrimps. I always try to find a non-kosher! restaurant if I go out to eat just so that I can eat shrimps. I never ate non-kosher until I came to Israel. Shame on me.

    Judy Goldin: Jalapeno poppers are jalapenos stuffed with cheese, commonly cream cheese and or cheddar, and they are either breaded and fried until crispy or wrapped in bacon and grilled.

    And cooked jalapeños are not nearly as hot as raw ones in salsas. Our local Chinese buffet restaurant makes a pork dish with jalapeños in it and each pepper is sliced in half lengthwise so you eat the whole half a pepper and they aren't nearly as hot when cooked, same as the poppers. But they taste good. In Mexico you can also get canned ones that are not breaded but stuffed with picadillo (ground beef cooked with onions, peppers, and spices) and atun (tuna fish) and they are great little snacky foods. They are pickled (en escabeche) or mildly marinated one might call them. Great stuff.

    I have to make a correction: Kevin didn't top his burgers with poppers. The poppers were in the burgers. Somehow I missed that, sorry for the misquote. I just saw that yummy burger and I knew I had to try something like it.

    So, I made a burger and topped with with cream cheese poppers. It was still a heavenly experience and I couldn't have done it without you Kevin! Nor would have I have tried the Black Forest Pancakes. I bought cocoa powder (Which I never do) because of your recipe!

    This looks amazing! I love shrimp in pretty much every dish. The pina colada cream looks great, too! I'm in Hawaii right now and there are just fresh pineapples practically following me home from the store.
