Pesto Grilled Shrimp Caprese Quesadillas

Crispy pesto grilled shrimp filled with plenty of ooey gooey melted mozzarella.

After making the absolutely addictive pesto grilled shrimp the other day I had to make some more and this time instead of just eating it from the stick I wanted to use it in something, quesadillas! I have been on a quesadilla kick lately and I could not help but think that the pesto grilled shrimp would be amazing in some caprese salad inspire quesadillas with plenty of melted fresh mozzarella and tomatoes along with some extra pesto and drizzle of balsamic reduction! In general these flavours work magically well together and it is especially true in quesadilla form! I will definitely be enjoying a few more of these quesadillas in the next few weeks!

Pesto Grilled Shrimp Caprese Quesadillas

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 1

Crispy pesto grilled shrimp filled with plenty of ooey gooey melted mozzarella.

ingredients
  • 1 teaspoon balsamic reduction
  • 1 (10 inch) tortilla
  • 1/2 cup mozzarella or jack cheese, shredded
  • 1/4 cup pesto grilled shrimp
  • 1/4 cup tomatoes, sliced or diced
  • 1 tablespoon pesto
  • 1 teaspoon balsamic reduction
  • 2 basil leaves, torn
directions
  1. Heat a pan over medium heat, place the tortilla in the pan, sprinkle half of the cheese over half of the tortilla, followed by the shrimp, pesto, balsamic reduction, and basil and the remaining cheese.
  2. Fold the tortilla in half coving the filling and cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
Note: For balsamic reduction Simmer 1/2 cup balsamic vinegar and 1 tablespoon brown sugar until reduced by half.

    Kevin – you are the king of quesadillas – I love using all the bits and pieces in my fridge to make them, and happen to have lots of pesto from all the summer produce/herbs I've gotten so far in my CSA Box. That balsamic reduction sounds like a secret ingredient – sweet!

    I just LOVE pesto shrimp. I make it as a pasta all the time and pretty sure I would love it just as much as a quesadilla.

    What is balsamic reduction? I'm almost 40 & I've never heard of it before. Is it something we can get in America? Where do you find it in a grocery store?~ Kim

    Anonymous: The balsamic reduction is pretty much just balsamic vinegar that has been simmered to reduce it until it is thicker and more syrupy. You can also throw some sugar into the mix to make it sweeter if you desire. I prefer to use the reduced balsamic vinegar so that you do not have to use as much and your quesadilla does not get soggy.
