Strawberry Balsamic Grilled Chicken and Bacon Quesadillas

Strawberry Balsamic Grilled Chicken and Bacon Quesadillas

Strawberry and grilled chicken quesadillas with bacon, sweet onion, balsamic reduction and sriracha chili sauce all wrapped up in a toasty tortilla and plenty of ooey gooey melted cheese.

Are you ready for some more quesadillas with summer fruit or berries? How about some strawberry quesadillas? Strawberries are in season right now and it’s been hard not to think about different ways of enjoying them since I have been picking up four or more pints of them every week! Quesadillas definitely came to mind, I mean you cannot go wrong combining fruit or berries with plenty of melted cheese, and I wanted to make a light meal out of them by adding some grilled chicken. I also included some of my favourite strawberry flavour combinations including smoky and salty bacon, sweet onions, tart balsamic vinegar, spicy sriracha chili sauce and fresh cilantro giving it a nice exotic flare! I have to say that these flavours work very well together making these quesadillas one fabulous way to enjoy some of summers bounty!

Just look at all of that melted cheesy goodness!

Tip: Try to keep the balsamic reduction away from the edges as it can make quite the mess if it oozes out of the sides with the melting cheese.

Anonymous: Sriracha is a hot sauce that you should be able to find in the Asian section at most grocery stores. Sriracha on Wikipedia If you cannot find it you can use another hot/chili sauce like sambal oelek or tabasco.

I was so patient and focused on making my first balsamic reduction that I completely overlooked the fact that you should NOT be drizzling ALL of the balsamic reduction over the quesadilla. 1 tsp is a lot less than the 1/4 c. you will make. Doh. Definitely ruined my first attempt but will try again!

Marie: Sorry about that, I just couldn't see writing a recipe that makes 1 teaspoon of balsamic reduction… It keeps for a long time in the fridge and it goes great in a lot of things though!

    Hi Kevin,

I just want to say that I am AFRAID of the taste of Balsamic vinegar
it looks like it is to strong and to sour. I don't want to add it to your
recipe because I think I won't be able to eat the rest of it. Your food
is so good after I cook it . Kevin What should I DO…..

Anonymous: Balsamic vinegar is on the sweeter side and for the reduction you can increase the amount of sugar to temper the sourness even more. You could also easily just omit the balsamic vinegar.
