With summer here it is grilling season and one of my favourite things to grill is meat on a stick! I mean, what’s not to like? You have meat, sticks and fire! Mmm… Although I generally think of chicken first when it comes to meat on a stick, you can’t go wrong with plump juicy shrimp either! I came across the idea of pesto grilled shrimp on Gina’s Skinny Taste a few months ago and I was just itching for summer to arrive so that I could use some fresh basil, fire up the grill and try them out! The recipe could not be easier, you simply make the pesto, marinate the shrimp, skewer is on sticks and grill it and this is good since you will want to be making it every week this summer!
Serve with lemon wedges for a hit of citrus-y freshness!

Pesto Grilled Shrimp
Light fresh and summery basil pesto marinated grilled shrimp.
ingredients
- 1/2 cup basil, packed
- 1 small clove garlic
- 1 tablespoon pine nuts, toasted
- 2 tablespoons parmigiano reggiano (parmesan), grated
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (~1/4 lemon)
- salt and pepper to taste
- 1 pound shrimp, peeled and deviened
directions
- Pulse the basil, garlic, pine nuts, parmesan, oil, lemon juice, salt and pepper in a food processor or blender until smooth.
- Marinate the shrimp in the pesto for at least 20 minutes, up to overnight, in the fridge.
- Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.

Maggie Santiago: Yes you can easily omit the pine nuts in the pesto! You could also replace them with another nut if desired.

Newbie cook here, this recipe looks delicious (and must be, based on the comments), but…I just "pulsed" all the stuff together, and I have a rather thick "paste". *That* is the "marinate" for the shrimp?
randy: You should get something more of a sauce rather than a more liquid-y marinade or a paste. You should definitely be able to marinade them in it. If it is too thick, you can add some extra oil, lemon juice or water to thin it out a bit.
I made these recently when we had company over and they were absolutely delicious, will make again and again for sure.

Looks very good, I will have to try this. I just don't understand why you needed to wait for summer for a fire. I cook open flame no matter how much snow is on he ground.
I just Love the looks of this recipe, but I love in an Apt where we can't grill anything. Which really stinks cause my husband Loves to to grill Everything. Even in the middle of winter. I was wondering if I bake/broil these? If so can you share that?? Or anyone?? Cause I really want to try these. Thank you in advance! Still a little behind when it comes to cooking. My intentions are much better than my execution of a recipe!!
mommamarie: You can bake these: 400F for 6-8 minutes. You can also broil them, just keet a really close eye on the! Pan frying also works at medium-high for 2-3 minutes per side. Enjoy!
Wow Kevin, I've made so many of your recipes and I can't believe how many I forgot to post on the outcome, I'm doing some catch-up. We've been making these 3 – 4 years? They are awesome! LOVE them!! Great for taco's or over Cilantro Lime Rice (hope I got that right) from this site or even as a side for steak with company :))

Made the pesto shrimp today. Out of five stars, I would give this recipe a 1 — very bland and tasteless – don't waste your time and money on this one!!!
This is one of our summer favorite recipes! I usually add a little extra garlic and make sure I let the shrimp marinade for at least 2 hours. So easy and delicious!
I agree with a commenter that my pesto looks more like a paste. I think it needs way more olive oil! Just for anyone making this and expecting a sauce marinade…
