Fajitas are one of my favourite meals and normally I grill or pan fry the meat but you can also pan roast the entire meal! Being able to roast everything on a single sheet pan in the oven makes thing so super quick and easy! You simply need to toss the meat, in this shrimp, in taco seasoning along with slices of peppers and onions in some oil before roasting on a sheet pan in the oven! It’s as simple as that! Shrimp works well in this recipe because it does not take long to cook but you could also use thin sliced of chicken or beef. These fajitas are the perfect quick meal for a busy weeknight and they are kid friendly when served as ‘make your own’ style with all of the topping served separately!

Kevin you are the King of shrimp dishes. We have tried several.

In your pictures, it looks like the skin & tails were left on the shrimp. Just for looks? Cannot wait to try this but w/o the tails attached!
kevin says
Yes, the shrimp tails are there just for the looks. Remove them for convenience.

It says 30 carbs. Is that per serving without the tortillas I presume.
kevin says
I use a tool to calculate the Nutritional Facts and it looks like it chose a weird tortilla from it’s database of tortillas. I ran the calculations again and I have updated the recipe. (Without the tortillas, this recipe is at about 10 carbs!)

This sounds delicious and will make it very soon! Do you think this dish would be good under other āflavor profilesā?
Meaning, would an Italian, Greek, oriental, flavor profiles be good in this recipe (while leaving out the Mexican/Spanish flavor profile)?
