Burritos are one of my favourite foods and it’s fun to enjoy them for breakfast! These burritos are super easy to make! You simply cook spicy fresh Mexican style chorizo sausage, cook potatoes until golden brown and crispy, cook scrambled eggs, throw everything into tortillas, along with cheese and salsa, before wrapping, warming and enjoying! These breakfast burritos can be made ‘as you like’, so you can change the chorizo to your favourite sausage, or bacon; change the potatoes to hash browns, or tots; use your favourite cheese; use your favourite salsa. I like to make a batch of breakfast burrritos ahead of time and warm them up for quick and easy breakfasts for busy mornings!
Breakfast Burritos
Breakfast burritos stuffed with chorizo sausage, potatoes, eggs, salsa and plenty of melted cheese!
ingredients
- 1 pound fresh chorizo sausage, casings removed
- 1 tablespoon oil
- 1 pound potatoes, diced
- 1/4 teaspoon paprika
- salt and pepper to taste
- 1 tablespoon butter
- 1/4 cup onion, diced
- 1 jalapeno pepper, finely diced
- 8 eggs, lightly beaten
- salt and pepper to taste
- 4 large (12+ inch) flour tortillas
- 4 ounces cheese (such as cheddar or jack), sliced or shredded
- 1/2 cup salsa verde
directions
- Cook the chorizo in a large pan over medium heat until cooked through.
- Heat the oil in a large pan over medium heat, add potatoes, seasoned with paprika, salt and pepper, and cook until golden brown on all sides.
- Melt the butter in a large pan over medium heat, add the onions and jalapeno and cook until tender, about 5 minutes, before adding the eggs, seasoned with salt and pepper, and cooking, scrambled style.
- Divide the sausage, potatoes, eggs, cheese, and salsa between the tortillas, wrap and optionally toast in a pan over medium heat until lightly golden brown.
Tip: Feel free to make any of the components a day ahead of time!
Tip: These burritos are great to make ahead of time, store in the fridge and warm up as desired for a quick, on the go, breakfast!
Option: Replace the chorizo with breakfast sausage or bacon.
Option: Replace the potatoes with tater tots or hash browns.
Option: Roast the potatoes in the oven instead of pan frying.
Option: Replace salsa verde with your favourite salsa, sweet chili sauce, or pico de gallo!
Option: Add avocado or guacamole!
