Please raise your hand if you saw this coming! 🙂 Although the strawberry salsa and the cilantro lime grilled chicken that I recently shared are amazing by themselves, they are even better together! It’s really hard to beat a quick and easy meal consisting of a tasty grilled meat topped with a fresh fruit salsa and this one just screams summer! If you marinate the chicken and make the salsa the night before all you really need to do is head outside into the sunshine, fire up the grill and cook the chicken for a no fuss and no mess meal in the great outdoors, or just in your back yard, or on a balcony as the case may be. If you are looking for a nice way to celebrate the arrival of summer you can’t go wrong with this cilantro lime grilled chicken with strawberry salsa!
Serve with grilled asparagus for a perfect light grilled summer meal!
Cilantro Lime Grilled Chicken with Strawberry Salsa
Tasty cilantro lime grilled chicken topped with a fresh, summery strawberry salsa.
ingredients
- 1 pound strawberries, diced (~2 cups)
- 1/4 cup red or green onion, finely diced or sliced
- 1 jalapeno, finely diced
- 1 lime, juice and zest
- 2 tablespoons cilantro, chopped
- salt to taste
- 1 pound boneless and skinless chicken breasts
- 2 limes, juice and zest or 1/4 cup lime juice
- 1 tablespoon oil
- 2 tablespoons cilantro, chopped
- 1 clove garlic, grated
- 1 jalapeno, finely diced (optional)
- salt and pepper to taste
For the strawberry salsa:

- Mix everything and enjoy!
- Marinate the chicken in the mixture of the lime juice and zest, oil, cilantro, garlic, jalapeno, salt and pepper for 30 minutes to overnight.
- Grill the chicken over medium-high heat until cooked, about 3-5 minutes per side.
- Serve topped with the strawberry salsa.

Just made this tonight. So delicious and fresh. Strawberries and jalepeno is a bizarre and amazing combination. There is a lot of chopping and prep involved but it is well worth it. I paired this with cilantro lime basmati rice! Thank you for sharing this recipe.

If I use skinless boneless chicken thighs instead of chicken breasts, is the marinade enough as is written in the recipe for about 10 thighs or would I need to double the marinade?

we did this tonight – only difference we added some fajita seasoning to the chicken while it cooked. Very tasty. Its going to be our new summer addition to the menu. Well done.

There is coriander mixed in with the strawberry salsa and there is coriander mixed in with the marinade for the chicken. Enjoy!
