Tacos al pastor are so good, but they take a bit of time to make, so I like to keep this quick and easy version at the ready! Normally this dish is made with a pork shoulder/butt that is marinated and then slowly roasted and this version uses ground pork that’s cooked in a skillet with the marinade/sauce/salsa mixed in. After the pork is cooked, some pineapple is mixed in and it’s ready to go! I like to serve this quick and easy pork al paster in taco form in corn tortillas, with a fresh pineapple salsa, avocado and a dusting of cheese. The pork al pastor filling also works well in quesadillas, burrito, enchiladas, etc.!
Ground Pork al Pastor Tacos with Pineapple Salsa
Quick and easy al pastor flavoured ground pork tacos with guacamole and fresh pineapple salsa!
ingredients
- 1 dried guajillo chili, stems and seeds removed (or 1/2 tablespoon guajillo chili powder)
- 1 chipotle chili in adobo sauce, chopped
- 1 cup pineapple, diced*
- 1 tablespoon achiote/annatto paste (optional)
- 1/4 cup onion, diced
- 1 clove garlic, chopped
- 1/2 tablespoon cider vinegar
- 1/2 tablespoon lime juice (or more vinegar)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1 tablespoon oil
- 1 pound ground pork (or beef, or turkey, or chicken)
- 1 cup pineapple, diced*
- 12 small (3-4 inch) corn tortillas, warmed/toasted
- 1 cup pineapple salsa*
- 1/2 cup guacamole (or mashed avocado)
- 2 tablespoons cotija (or queso fresco of feta), crumbled
- 1 lime, sliced

- Soak the dried guajillo chilies in 1/2 cup of just boiled water until tender, about 20 minutes.
- Puree the soaked chilies, chipotle chilies in adobo sauce, achiote paste, onion, garlic, cider vinegar, lime juice, cumin, oregano, and salt. (If the sauce is too thick, add some of the water that the chilies were soaked in.)
- Heat the oil in a large skillet, add the pork and cook in the skillet, about 10 minutes.
- Add the sauce mix and cook for 5 minutes.
- Add the pineapple pieces, toss and enjoy!
- Assemble the tacos and enjoy!

Hi, Directions say pineapple juice, but I’m not seeing that in the ingredients. How much juice? Or just use the pineapple pieces? Thank you.

I have a version of this recipe that uses canned pineapple. If using fresh pineapple, there is no juice, but, if using canned pineapple, you can throw the juice in!
