Rice doesn’t have to be boring! This Greek style leeks and rice (aka prasorizo) is a great way to make the rice side dish the star of your next meal! This recipe starts out by cooking leeks, onions and green onions in olive oil before adding garlic and then cooking the rice in the same pan! When the rice is finished it’s hit with a splash of lemon and fresh herbs! I like to serve it topped with a light crumbling of feta!




Prasorizo (Greek Leeks and Rice)
A light and fresh rice dish with leeks, onions, green onions and a hit of lemon juice!
ingredients
- 2 tablespoons olive oil
- 3 leeks, trimmed, cleaned and sliced
- 1 small onion, diced (optional)
- 4 green onions, sliced and divided, lights and greens (optional)
- 2 cloves garlic, chopped (optional)
- 1 cup rice (long or medium grained)
- 2 cups water (or vegetable broth, or chicken broth)
- 1 lemon, juice and zest
- 2 tablespoons fresh dill, chopped (or 1/2 teaspoon dried dill)
- salt to taste
directions
- Heat the oil in a pan over medium heat, add the leeks, onions and lights of the green onions and cook until tender, about 5 minutes.
- Add the garlic and rice, mix well and cook for a minute.
- Add the water, bring to a boil, reduce the heat, and simmer, covered, until the rice is tender and the liquid has been absorbed, about 20 minutes.
- Mix in the emon juice and zest, dill and the greens of the green onions, season with salt to taste and enjoy!
Option: Add 2 tablespoons of fresh chopped parsley at the end.
Option: Add 1/4 cup feta, crumbled, at the end.
