Rice makes for a great side dish and it’s so easy to add flavours to it like in this Greek style lemon rice! This is a pretty simple rice recipe where onion, green onions, lemon, dill and parsley are added making it a really nice, bright and fresh dish! I also like to add a hit of butter and some crumbled feta to finish the dish off. No matter how you make it, this Greek style lemon rice is the perfect side dish for any meal, including Easter!
Greek Lemon Rice
A simple, fresh lemon-y rice with plenty of fresh herbs!
ingredients
- 2 tablespoons olive oil
- 1/2 cup onion, diced
- 4 green onions, thinly sliced and divided (lights and greens)
- 1 cup long grained rice
- 3 cloves garlic cloves, minced/grated
- 2 cups low sodium chicken broth (or vegetable broth)
- 1/4 cup lemon juice (~1 lemon)
- 2 teaspoons lemon zest
- 1 teaspoon dried oregano
- 2 tablespoons butter (optional)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1/4 cup feta, crumbled (optional)
directions
- Heat the oil in a medium saucepan over medium heat, add the onion and the lights of the green onions, and cook until tender, about 5-7 minutes.
- Add rice and garlic, mix well and cook for a minute.
- Add the broth, lemon juice, lemon zest, oregano, and butter, bring to a boil, reduce the heat to low, cover and let it cook for 20 minutes.
- Turn off the heat, mix in the parsley, dill, the greens of the green onions, and feta, and enjoy!
Option: Add 1 leek, thinly sliced!
