Broccoli and cheese soup is a favourite of mine, I have already shared my go-to recipe for roasted broccoli and cheddar soup, and this is another great recipe! This recipe differs from my other one in two main ways, first: that this one has a thick and velvety creamy broth, and second: that it’s a one-pot recipe. The thick and creaminess of this soup comes from the addition of the russet potato which is simmered until tender and then pureed into the broth. The soup is lightly seasoned with a bit of garlic, mustard powder and a splash of hot sauce with the goal of adding a bit of excitement without distracting from the key flavours of broccoli and cheese! Speaking of cheese, this recipe uses a combination of cheddar and american which adds a nice mellowness.
