Up next for my leftover Easter ham is something nice and simple and yet oh so good, a grilled cheese sandwich; pure comfort food! Ham and cheese is a fabulous and broccoli and cheese is another, so why not combine the two? That’s right a broccoli, ham and cheddar grilled cheese sandwich! I was not about to stop there either, I roasted the broccoli to bring out even more of it’s flavour before adding it to the sandwich! I then finished the grilled cheese off with a touch of grainy mustard to give it some bite! Cheese, broccoli and ham is such a magical combination of flavours and it is perfect in grilled cheese form! If you are fresh out of leftover Easter ham you are going to have to run out and get some ham, along with the broccoli, but it is so worth it for these roasted broccoli, ham and cheddar grilled cheese sandwiches!
Don’t worry, another layer of cheese goes on top and all of that cheese that spilled out just becomes that burnt cheese around the sides of the sandwich; the best part!
Ah, just look at all of that melted cheese!
Roasted Broccoli, Ham and Cheddar Grilled Cheese
With roasted broccoli, ham and cheese never had it so good in a grilled cheese sandwich!
ingredients
- 1/2 cup broccoli, cut into small florets
- 1 teaspoon oil
- salt and pepper to taste
- 1 tablespoon butter
- 2 slices bread
- 2 slices cheddar (or 1/2 cup shredded)
- 1/4 cup ham, diced
- 2 teaspoons grainy mustard (optional)
directions
- Toss the broccoli florets in the oil along with the salt and pepper, arrange them in a single layer on a large baking sheet and roast in a preheated 400F/200C oven until lightly golden brown, about 20-30 minutes.
- Heat a pan over medium heat.
- Butter one side of each slice of bread, place one slice in the pan with buttered side down, top with half of the cheese, the roasted broccoli, ham, grainy mustard, the remaining cheese and finally the other slice of bread with buttered side up.
- Grill until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
Option: Omit the ham or replace it with crispy bacon.

Had this for dinner tonight and it was great! I only had a really crusty bread that I didn't think would make such a great pan-grilled cheese, so I just made open faced sandwiches and broiled them. I wish I had used a little more mustard–went really light on it–but still awesome dinner.

Kattie: I use a pan when making my grilled cheese but the press works but you need to be gentle to not squash it. 🙂
