Broccoli and Cheddar Quinoa Bites

Baked broccoli and cheddar quinoa bites that make a great light, tasty and healthy snack.

The broccoli and cheddar flavour combo is a great one and this time I use it in some bites sized quinoa cakes. Often when I do something like these I will make them more like a fritter and fry them in oil but it’s also fun to bake them in mini muffin pans and it keeps them a little lighter. These broccoli and cheddar quinoa bites could not be easier to make, you simply cook the quinoa, mix all of the ingredients and bake! Not only are they tasty but they are also pretty healthy and kid friendly so the next time you are looking for something to snack on put down the bag of chips and grab some broccoli and cheddar quinoa cakes.

Broccoli and Cheddar Quinoa Bites

Prep Time: 5 minutes Cook Time: 35 minutes Total Time: 40 minutes Servings: 24

Baked broccoli and cheddar quinoa bites that make a great light, tasty and healthy snack.

ingredients
  • 2/3 cup quinoa, rinsed
  • 1 cup water
  • 2 cups broccoli, chopped
  • 2 cups cheddar cheese, shredded
  • 2 eggs, lightly beaten
  • 1 tablespoon grainy mustard
  • salt, pepper and cayenne to taste
directions
  1. Bring the quinoa and water to a boil, reduce the heat, simmer until tender and the water has been absorbed, about 15 minutes and let cool.
  2. Mix everything, spoon into mini muffin pans and bake in a preheated 350F/180C oven until lightly golden brown on top, about 15-20 minutes.
Option: Add 1 cup finely diced ham.
Option: Add 1 cup rinsed white beans.

    Anonymous: You can try it by replacing the eggs with more cheese. The mixture won't hold together as well before baking but the cheese will melt and hold them together once baked.

    I've been making these (with various vegetables, cheeses and spices) for several years. Saw the fritters on Mel's Kitchen Cafe. She said they were addictive and boy, was she ever right. These are delish, filling, and healthy – not to mention easy. They are perfect as a snack on a road trip. Beats the junk available from convenience stores and fast-food places. I don't know why but I never thought about broccoli and cheddar. Thanks Kevin! Oh, I forgot. No matter what kind/brand of muffin tin you are using, ALWAYS SPRAY. These delicious little bites tend to stick to the pan. Trust me.

    Hi! I found you on Pinterest. I made these tonight (I tweaked it slightly: less cheese, one egg, added sauteed mushrooms and onions) and I just wanted to thank you! We had them as an entree and they were fantastic. Definitely a new weeknight-dinner staple for me. I'm excited to check out your other recipes!

    Anonymous: Here is a simple version of it and I will get to posting it soon:

    1/4 cup lemon juice or white vinegar
    1/4 cup olive oil
    1 tablespoon Dijon
    1 teaspoon grainy mustard
    1 tablespoon honey
    1 clove garlic, grated (optional)
    1/4 teaspoon salt
    1/4 teaspoon pepper

    I've been making these for years. My kids love them and they're super easy to pop into lunches. I use a silicone mini muffin pan and they fall out, no need for spray.
