The broccoli and cheddar flavour combo is a great one and this time I use it in some bites sized quinoa cakes. Often when I do something like these I will make them more like a fritter and fry them in oil but it’s also fun to bake them in mini muffin pans and it keeps them a little lighter. These broccoli and cheddar quinoa bites could not be easier to make, you simply cook the quinoa, mix all of the ingredients and bake! Not only are they tasty but they are also pretty healthy and kid friendly so the next time you are looking for something to snack on put down the bag of chips and grab some broccoli and cheddar quinoa cakes.
I served the broccoli and cheddar quinoa bites with a simple homemade honey dijon dressing for dipping.

I love the sound of these bites! They're almost like mac and cheese made healthier with quinoa!
Loving these bites!! They look so good!
Love these little bites!
Perfect bites! Quinoa is our favorite!!
The perfect little appetizers!!
I am loving this recipe, so simple and it looks super yummy. I bet they are super addictive 🙂
How do you think of this stuff Kevin!? yum!!
Kevin, you came up with an interesting use of quinoa. I love these mini bites.
Delicious quinoa, with cheddar cheese amazing taste!
Can you suggest a substitute for the eggs? We are non-egg eaters!
You can use potato starch to give it more consistency.
This recipe is GENIUS Kevin!!
Cool, a new way to use my mini muffin pan! Love quinoa, will have to give these a try 🙂
This is the perfect bite sized snack!
These are brilliant, Kevin! What a scrumptious and healthy party snack.
I love this recipe, Kevin! What a great idea for a snack or appetizer…delicious, light, and healthy…great combination. Thanks for sharing another fabulous idea!
Anonymous: You can try it by replacing the eggs with more cheese. The mixture won't hold together as well before baking but the cheese will melt and hold them together once baked.
Sign me up!! Love the cheese and broccoli combo.
These look good especially the pic where you are dipping them in sauce makes my mouth water!
I'm digging these bites in a major way. LOVE the broccoli cheddar combo!
Very clever using quinoa for appetizers.I never thought of that! Great job!
These are perfect appetizers for a party, this should feed many people with different types of dietary restrictions.
I've been making these (with various vegetables, cheeses and spices) for several years. Saw the fritters on Mel's Kitchen Cafe. She said they were addictive and boy, was she ever right. These are delish, filling, and healthy – not to mention easy. They are perfect as a snack on a road trip. Beats the junk available from convenience stores and fast-food places. I don't know why but I never thought about broccoli and cheddar. Thanks Kevin! Oh, I forgot. No matter what kind/brand of muffin tin you are using, ALWAYS SPRAY. These delicious little bites tend to stick to the pan. Trust me.
Love how easy and healthy this recipe is Kevin! I've been thinking about making some quinoa bites for a bit – can't wait to try these.
Hi! I found you on Pinterest. I made these tonight (I tweaked it slightly: less cheese, one egg, added sauteed mushrooms and onions) and I just wanted to thank you! We had them as an entree and they were fantastic. Definitely a new weeknight-dinner staple for me. I'm excited to check out your other recipes!
How long will these keep in a tupperware in the fridge?
Rachel: They should be good for 4-5 days in the fridge.
Anonymous: Love the addition of mushrooms! I am glad you enjoyed it!
Do you cook the broccoli first?
Tin Tin: No, the broccoli cooks when the bites bake. Enjoy!
Kevin, can you please share the dipping sauce recipe? 🙂
Anonymous: Here is a simple version of it and I will get to posting it soon:
1/4 cup lemon juice or white vinegar
1/4 cup olive oil
1 tablespoon Dijon
1 teaspoon grainy mustard
1 tablespoon honey
1 clove garlic, grated (optional)
1/4 teaspoon salt
1/4 teaspoon pepper
how many bites are included in the nutrition info?? thanks!
Love this! Is 70 calories, the amount of calories for the whole recipe or for just one muffin?
Francesca: That is per muffin.
Hey Kevin…Awesome recipe. Tried this for the first time last night and my hubby said he could easily pop a dozen of these! They sound 'healthy' tasting but were really quite delicious. Thanks for the recipe!
Can I use brown rice instead of quinoa? Do you think it would hold?
AnnTee: Rice will work! Enjoy!
I just made these and they were super tasty, but I wish I'd read the comments, because I didn't use the spray and now they don't want to come out of the pan whole.
I just made this and it is absolutely delicious! Thank you for the recipe 🙂
I've been making these for years. My kids love them and they're super easy to pop into lunches. I use a silicone mini muffin pan and they fall out, no need for spray.
These might actually get me to eat quinoa…can’t go wrong with broc n cheese
Are you using cooked or uncooked broccoli for this recipe?
I use uncooked broccoli in this recipe. It will cook as the bites bake. Enjoy!
