Frijoles charros, aka charro beans, is a super simple dish where dried beans are slowly simmered with bacon, chorizo sausage, chillies, tomatoes and seasonings. The recipe is as easy as soaking beans overnight, cooking bacon, sausage, onions, chilies, garlic, and cumin, adding the beans, broth, and tomatoes, and simmering until the beans are tender. Something magical happens when you slowly simmer the beans with meat where the result is flavour packed, super creamy beans that melt in your mouth! Charro bans are a great side or a light meal! You can serve it in a bowl with a spoon or you can make it a little less brothy and throw it into tacos, burritos, etc.!
Charro Beans
Mexican style simmered beans with chorizo sausage and bacon!
ingredients
- 1 pound dried pinto beans, picked over and soaked overnight
- 8 ounces bacon, cut into 1/2 inch slices
- 8 ounces chorizo (link), casings removed
- 1 cup onion, diced
- 1 jalapeno, diced
- 3 cloves garlic, chopped
- 1 teaspoon ground cumin
- 6 cup water (or chicken broth (link))
- 1 (15 ounce) can (fire roasted) diced tomatoes
- 1 tablespoon apple cider vinegar (optional)
- salt and pepper to taste
- 2 tablespoons cilantro, chopped
directions
- Cook the bacon in a large saucepan over medium heat, and set aside, reserving the bacon grease in the pan.
- Add the sausage and cook, breaking it apart as it cooks, before setting aside.
- Add the onion and jalapeno and cook until tender, about 5 minutes.
- Add the garlic and cumin and cook until fragrant, about a minute.
- Add the broth, tomatoes, beans, bacon, sausage and vinegar, bring to a boil, reduce the heat and simmer, covered, until the beans are tender, about an hour. *
- Season with salt and pepper to taste, serve, topped with the cilantro, and enjoy!
Option: Replace the dried beans with 3 (15 ounce) cans pinto beans, drained and rinsed, and reduce simmer time.
Option: Add 1 teaspoon ground coriander, along with the cumin.
Option: Add 1 teaspoon (smoked) paprika, along with the cumin.
Option: Add 1 teaspoon brown sugar, near the end.
Option: Add diced ham.
Option: Add diced hotdogs.
Option: Make it more or less saucy by using more or less broth.
Option: Serve topped with your favourite Mexican style toppings such as: pico de gallo (link), guacamole (link), avocado, sour cream, cheese, green onions, lime wedges, diced onion, etc.
