Cherry Clafoutis

I first came across the concept of a clafoutis last year after I started food blogging. I had however, just missed cherry season so I decided to wait. Now that the local cherries are here I had my chance. A clafoutis is a custard like dessert where fruit, most commonly the cherry, is baked in a custard like batter that is similar to pancake batter. Several recipes that I saw recommended cooking the cherries whole, with the pits in but I really don’t enjoy having to worry about biting into pits as I eat so I pitted my cherries first. I ended up going with this really simple recipe for a cherry clafoutis . I was a bit surprised as to how easy the clafoutis was to make. You simply mix the batter and bake it. The cherry clafoutis turned out pretty good! I enjoyed the soft and moist texture of the clafoutis and the cherries went really well in it. Clafoutis can be made with other fruits and now I am looking forward to experimenting with it. I have seen a few blueberry clafoutis that have been looking good…

Cherry Clafoutis

Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 55 minutes Servings: 6
ingredients
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 pound cherries (pitted)
directions
  1. Mix the flour, sugar and salt in a bowl.
  2. Mix in the eggs, one at a time.
  3. Mix in the milk and vanilla extract.
  4. Place the cherries on the bottom of a greased 9 inch pie plate.
  5. Pour the batter over the cherries.
  6. Bake in a preheated 375F/190C oven until the clafoutis is puffed and golden brown, about 40-45 minutes.

    Love it. Unfortunately British Cherries are under threat due to the loss of our cherry orchards. I have managed to find some in my local supermarket though. Never made a clafoutis before but have been told I have to take a dessert to a dinner party next week – might well try this one!

    This sounds like a cool dessert to try! Do you share all these things that you make and bake with your neighbours or family? It sure seems like a lot for you to finish on your own! I will love to have some 😉

    I eat cherries EVERY SINGLE DAY, since they’re in season right now (thank goodness for cherry-pitter tools, haha), so seeing them in the clafoutis is a treat! :0)

    This is so easy. LIke you, I’ve only learend about clafoutis through food blogging. I hadn’t known they existed previously. I should probably try one out… it’s a pretty easy dessert. And, I’m sure that it’s delicious too!

    I love the deep, devil-red color you have on your cherries 🙂 I’ve never had a good clafoutis before, sigh. I made one with pitted cherries but they puked their juice all over it– major sogginess.

    I love clafoutis and I love cherries. The only thing, the hesitation factor for me, is the pitting of the cherries beforehand. Which is why, I love them when somebody else makes them! 😉 Looks yummy!

    This is one of my favorite desserts in France!! However, they DO always make it with whole cherries here which I find really takes away the enjoyment of eating it-dodging pits and all-I’d love to have one sans pits! This and all your recipes look amazing like usual :)!

    I’m new to clafoutis… and never used cooked cherries before… well avoiding jams!
    Unfortunatly, here we only have cherry in june… maybe july.

    Isn’t clafoutis a total revelation?? I was also astounded when I learned that something that sounds so fancy is so easy to make! I have several recipes on my blog – cherries, apricots, peaches – and another to follow soon. Glad you’ve joined hte clafoutis club 🙂

    I have to agree about the pits – I prefer to keep all my teeth intact, also. But the French… not a chance! They don’t remove them for preserves, either!

    I do mine the same way, except I have subbed in almond extract for the vanilla. The cherry and almond just go together so well!!

    I just did a plum clafoutis and the only thing I wonder about it whether I cooked it long enough, as it fell directly after I took it out of the oven—it was so gorgeous before:( Tastes good but I wonder if it’s meant to be quite so moist.

    I've been intrigued for a while by clafoutis, I scoured the web for recipes, and settled for yours – alas – no cherries – so I used nectarines instead!
