Chipotle Meat Loaf

I have yet to try making a meatloaf. When I saw the National Meatloaf Appreciation Day event at Serious Eats I thought it was the perfect opportunity to try making a meatloaf. But what kind of meatloaf to make? After searching the web for a while I came across this tasty sounding recipe for a turkey and chipotle meat loaf. Making the meat loaf was super easy! Just mix everything and bake for an hour. The meat loaf turned out to be pretty tasty. It was nice and moist and full of flavour. I topped it with some salsa and I am thinking that some sour cream and shredded cheddar cheese would also be nice. Given that it requires two pounds of ground meat to fill a 9×5 inch loaf pan I now have a lot of leftovers that will make quick lunches for the rest of the week.

Chipotle Turkey Meat Loaf

Prep Time: 10 minutes Cook Time: 1 hour Total Time: 1 hour 10 minutes Servings: 4
ingredients
  • 2 pounds ground turkey
  • 2 chipotle chilies in adobo sauce (chopped)
  • 1 teaspoon adobo sauce
  • 1 onion (chopped)
  • 2 cloves garlic (chopped)
  • 1/4 cup breadcrumbs
  • 1/4 cup oats
  • 1/4 cup tomato sauce
  • 1 teaspoon cumin (ground)
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 2 large eggs
  • 1/2 cup cilantro (chopped)
directions
  1. Mix everything in a large bowl.
  2. Pour the mixture into a 9×5 inch loaf pan.
  3. Bake in a preheated 350F/180C oven for 1 hour.

    Your turkey loaf looks moist…most times ground turkey can be dry…you succeeded.

    I also like the use of oats…reminds me of haggis.

    Hi,
    I really enjoy your blog – the recipes look delicious and original.. and I can relate to having to cook in a closet size kitchen! My boyfriend and I live in Montreal and our kitchen is barely big enough for the 2 of us.. so I understand the challenge!

    It must be the weather – I just made a meatloaf, too. Meatloaf sandwiches…..yum!

    honestly…chipotle anything and i’m down. to see a turkey meatloaf look this good makes me want to try this one out. sad i missed National Appreciation Day…gonna have to check out that site. vive la mexican inspired dishes, by far my fav to cook and write about.

    I made this and it was absolutely delicious! I split it into two because it would have taken forever to cook in my oven. Thanks for a great recipe!
