This is a super easy and hearty soup with sausage and beans along with plenty of veggies. The soup starts out by cooking Italian style sausage before adding onion, carrot, and celery. Beans and potatoes make it hearty! Cream and parmesan make the soup nice and creamy and tasty! You can optionally puree some (or all) of the beans to make the broth even creamier and you can even omit the cream if you do this. This soup is pure comfort food in a bowl, perfect for cool days, or any days for that matter!
Creamy Sausage and Bean Soup
A tasty sausage and bean soup with plenty of veggies and parmesan cheese!
ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 cup onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 3 cloves garlic, chopped
- 3 tablespoons tomato paste (optional)
- 4 cups chicken broth (link) (or beef broth, or ham broth (link), or vegetable broth (link))
- 3 (15 ounce) cans white kidney beans, drained and rinsed *
- 2 cups potatoes (such as gold or russet), diced
- 1 teaspoon italian seasoning (link) (or oregano)
- 1/2 cup heavy/whipping cream (optional)
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- salt and pepper to taste
directions
- Heat the oil in a large saucepan over medium-high heat, add the sausage and cook, breaking it apart as it cooks, for 5 minutes.
- Add the onion, carrot, and celery and continue to cook until the vegetables are tender, about 10 minutes.
- Add the garlic and tomato paste, mix and cook until fragrant, about a minute.
- Add the broth, beans, potatoes, and italian seasoning, bring to a boil, reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Add the cream and parmesan, mix and let the cheese melt into the broth.
- Season with salt and pepper to taste and enjoy!
Option: Add 1 pinch red pepper flakes, along with the garlic.
