The green bean casserole is one of my favourite holiday side dishes but oven space and time is at a premium so I decided to come up with a stove top version. For the big Thanksgiving or Christmas dinner you are going to be roasting the turkey or other meat and the side dishes like the green bean casserole or the sweet potato casserole also need to be baked, not to mention dessert, and getting them all into the oven so that they are all ready in time for dinner can be a challenge. For this version of the green bean casserole I tried to keep all of the flavours of the classic green bean casserole without any of the oven time. Steamed green beans are nice and easy on the big day and smothering them in a tasty stove top mushroom sauce is always a win. Of course, we cannot forget the signature french fried onion topping that adds a nice crispy texture.
Deconstructed Green Bean Casserole
Green beans smothered in a creamy mushrooms sauce and topped with french fried onions in this stove top take on the classic Holiday casserole side dish.
- 2 tablespoons butter
- 1 small onion, diced
- 8 ounces mushrooms, sliced
- 1 clove garlic, chopped
- 1/2 teaspoon thyme, chopped
- salt and pepper to taste
- 2 tablespoons flour
- 1/4 cup dry white wine
- 1/2 cup vegetable or chicken broth
- 1/4 cup heavy cream
- 1/2 cup gruyere or cheddar (optional), grated
- salt and pepper to taste
- 1 pounds green beans, trimmed
- 1/4 cup french fried onions
- Melt the butter in a pan over medium heat.
- Add the onions and cook until tender, about 5-7 minutes.
- Add the mushrooms and saute until the mushrooms start to caramelize, about 10-15 minutes.
- Add the garlic and thyme and saute until fragrant, about a minute.
- Sprinkle then mix the flour in and cook for another 2 minutes.
- Add the white wine and deglaze the pan.
- Add the broth and cream and simmer until it thickened, about 2-3 minutes.
- Add the cheese and let it melt, season with salt and pepper and remove from heat.
- Bring a large pot of water to boil, add the green beans, cook until they just start to turn tender and plunge then them into cold water.
- Serve the green beans topped with mushroom sauce and french fried onions.

I also just enjoy having the green beans freshly steamed – placed on some delicious sauted mushrooms and then garnished with french-fried onion rings that have been dusted with my favorite grated cheese (let a bit of that cheese spill over onto the beans and mushrooms too).
Too often that casserole is too heavy with all the other foods that are served with it during the holidays, so I made up my own version so I could still get those flavors but not the calories and also eliminate the 'creamed condition' because my husband doesn't like creamed 'anything'.
Those canned little crunchy onion rings go well with some home-made fresh bacon bits too – sprinkle both of them on fresh green beans that have been sauted with slivered almonds, and you've got another fun side-dish that picks up on that beloved flavor our grandmothers invented with the green bean casserole to start with. 😉
