I like to have quick, ready to go, breakfasts on hand and these tasty egg bites are easy to make ahead of time and warm up for busy mornings! These egg bites are the simple combination of eggs and cheese, a mixture of cottage cheese and a melty cheese, such as cheddar, gruyere, mozzarella, swiss, etc. The eggs and cheese are pulsed in a food processor before adding some flavours, pouring into a muffin pan and baking. This recipe calls for bacon, cheddar and green onions, which is one of my favourites, but you can use any flavour combination that you want! (See below the recipe for some more ideas!) I like to make a batch of these on the weekend and store them in the fridge for a few days, warming them up in the microwave in the mornings for a quick breakfasts on the go!
How about sundried tomatoes, mozzarella and basil?
Egg Bites
Quick and easy, make ahead, breakfast egg bites packed with protein and flavour!
ingredients
- 6 large eggs
- 3/4 cup cottage cheese
- 3/4 cup cheddar cheese (or gruyere), shredded
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices bacon, cooked and crumbled
- 2 green onions, thinly slices
directions
- Puree the eggs, cottage cheese, cheddar cheese, salt, and pepper in a food processor before mixing in the bacon and green onions.
- Pour the mixture into a regular sized 12 hole muffin pan and bake in a preheated 350F/180C oven until set, about 20-25 minutes.
Note: If your muffin pan in not a no-stick pan, you will want to grease the pan to prevent sticking.
Option: Use a mini muffin pan and reduce the baking time to 15-20 minutes.
Option: Use a large muffin pan and increase the baking time to 25-30 minutes.
Option: Try your own flavour combinations by replacing the cheddar, bacon and green onions!
Option: Try Spinach and Feta Egg Bites; use 3/4 cup shredded mozzarella, 1/4 cup crumbled feta, 1/3 cup chopped fresh baby spinach, 1 teaspoon chopped fresh dill, 1 teaspoon chopped fresh parsley.
Option: Try Roasted Red Pepper and Feta; use 3/4 cup shredded mozzarella, 1/4 cup chopped roasted red peppers, 1/4 cup crumbled feta.
Option: Try Sundried Tomatoes and Basil; use 3/4 cup shredded mozzarella, 1/4 cup chopped sundried tomatoes, 2 tablespoons thinly sliced basil
Option: Try Ham and Cheese; use 3/4 cup shredded swiss cheese, 1/3 cup chopped ham.
Option: Try Mushroom and Swiss; use 3/4 cup shredded swiss cheese, 1/3 cup chopped mushrooms.
Option: Replace the bacon with cooked and crumbled chorizo sausage.
