Fig and Gorgonzola Crostini with Honey

[heart_this] · Sep 14, 2012 · 9 Comments

Fig and Gorgonzola Crostini with Honey

Sweet and juicy fresh figs on toast with creamy melting gorgonzola cheese, a touch of honey and thyme.

Sweet figs and tangy blue cheese is a fabulous flavour combination and when I came across the idea for these fig and gorgonzola crostini on Tartlette I immediately knew that they would be amazing! In addition to the figs and gorgonzola, these crostini also have walnuts, thyme fresh cracked pepper and a drizzle of honey for even more sweetness to balance the tangy gorgonzola. The crostini are as easy to make as assembling them and then broiling them until the gogonzola just starts to melt and gets nice and creamy. Despite being so easy to make these fig and gorgonzola crostini are definitely a crowd please at a party and they also make for a nice light meal.

Jerry Traunfeld has a similar recipe that I've used many times and love. In his, he warms the honey on the stove and infuses it with thyme. Then the figs and bread are grilled. We always have the cheese at room temperature and when assembled along with some fresh thyme, it all oozes together in the best way. Good recipe for the grill outside.

I made them for breakfast. Yum….
I didn't have fresh figs, so used some big, dried Turkish figs that I pressed out into thin medallions. A nice fit on an English muffin. I broiled them on low temp about 9" from the coils. The figs became sort of chewy and caramelized. Very nice! Thanks for your inventiveness!
