Harissa Roasted Squash

I like to have a nice collection of quick, easy and tasty side dishes on hand and I am always on the lookout for more. A while ago I came across this one for harissa roasted squash on What do I want to cook today? that sounded like it fit the bill perfectly. I had picked up some harissa a while ago but I had only used it once and I was looking for new ways to enjoy it. Harissa is a red sauce from Northern Africa that is made from chili peppers, garlic and other various things. This side is really easy, you just peel and cut the squash, toss it with some oil and the harissa and pop it in the oven to roast. Roasting the squash brings out its flavour along with its natural sweetness which went really well with the spicy harissa. I served it with my roasted lamb in coffee sauce dinner and it went well with the lamb. Overall I was quite pleased with this quick and easy side dish and I will be making it again.

Harissa Roasted Squash

Cook Time: 30 minutes Total Time: 30 minutes Servings: 4
ingredients
  • 4 cups squash (cut into bite sized pieces)
  • 1 tablespoon oil
  • 1 tablespoon harissa
directions
  1. Toss the squash in the oil and harissa to coat.
  2. Roast the squash in a preheated 400F/200C oven until tender, about 30 minutes turning in the middle.

    Winter squash is my favorite vegetable of the moment (which is really fortunate since it’s in season 😛 ) and I am always looking for variations on the traditional maple syrup glaze. This looks great!

    I love harissa – I marinated some tri tip in it not that long ago. The type I bought is not all the spicy, but it sure is delicious.

    Harissa is such a great all-purpose pepper paste. Try some in unexpected places, like beef stew or marinara sauce!

    This sounds so good, another side I’d like to give a try. I haven’t made the onion Gratin side dish you made yet for one reason, I can’t for the life of me find Gruyere cheese. I’m sure it’s right in front of me in the cheese isle, but this is the 3rd time I’ve made an attempt to find it, If I can Fontina and Goat I should be able to find Gruyere. Any suggestions for a cheese I can improvise and it come out just as good?

    have you ever tried making your own harissa? it seems like a bit of a pain, but it’s really worth it. i’ve done a simple one (basically, just rehydrated dried red chiles, garlic and oil) but i’ve been wanting to make the one in this month’s saveur:

    Heh, I’m glad I’m not the only one stuck on pumpkin. Pumpkin soup, pumpkin casserole, pumpkin muffins, pumpkin whatsits, etc. It really can’t be helped because pumpkin is so good in the first place and this recipe looks damn fine.
