Kimchi Pajeon (Kimchi Pancake or Pizza)

Kimchi pajeon is a Korean kimchi pancake or pizza that is similar to the Japanese okonomiyaki . In its base form a pajeon is made with eggs, flour and green onions and from there you can add whatever you want. In this case the obvious next ingredient is the kimchi. Kimchi adds a ton of flavour to the pancakes and gives them a nice bit of heat. I really like the crunchy texture that the kimchi adds. Like most pancakes you are going to need some liquid that makes this the perfect way to use up any excess kimchi juice at the bottom of the container. With that you have the simple version of the kimchi pancake. I like to add some bacon as it goes really well with kimchi and when I am looking for something healthier I like to add grated zucchini, squash or sweet potatoes. Once you have the pancakes you can top them with various garnishes and/or serve them with dipping sauces. You can really do whatever you want.

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 2
ingredients
  • 2 strips of bacon (cut into 1/2 inch pieces)
  • 1 cup flour
  • 1/2 cup water
  • 1/2 cup kimchi liquid
  • 1 egg
  • 1/2 cup kimchi (drained and chopped)
  • 2 green onions (chopped)
directions
  1. Cook the bacon in a pan and set aside to cool retaining the grease.
  2. Mix the bacon, flour, water, kimchi liquid, egg, kimchi and green onions in a large bowl.
  3. Heat the bacon grease in the pan.
  4. Add the batter and cook until golden brown on both sides.

Prep Time: 10 minutes Total Time: 10 minutes Servings: 2
ingredients
  • 1 tablespoon ssamjang
  • 1/2 tablespoon gochujang
  • 2 tablespoons sherry vinegar
  • 2 tablespoons vegetable oil
directions
  1. Mix everything until smooth.

    I have never had Kimchi before, but the ingredients in it appeal to me – so I imagine I would like it – and the pancake too! The sauce recipe really sounds good.

    I’ve never heard of Kimchi pancakes before but they look good!I’m thinking I wouldn’t be able to get a jar of Gochujang. What does it taste like so I could maybe substitute it?

    Your Kimchi pancakes look delicious. Back when I lived in Colorado I use to shop in a big asian market and they made them fresh there. I always brought some home. Haven’t had them in years though… I’ll have to try your recipe when I have the correct ingredients. Thanks Kevin!

    I love kimchi jeon with very old sour kimchi. Wonderful stuff. My Korean friend calls it Korean Pizza. Nothing like pizza though. Hers are thinner and crispy. She adds zucchini too.

    Jan: Gochujang is a Korean chili sauce that is made with ferments soy beans and rice. It is completely optional and the pancakes would be great without it.

    We (or, my husband more like it) just gorged ourselves with kimchi night before. Have Korean pancakes often, but never Kimchi pancakes. I should try this out.

    wow! i never thought or heard of using kimchi in cooking, besides a condiment! What a great idea-i love kimchi! And the egg could easily be subbed by flax seed for vegans!
